Pecan Cream Pie

 

 
   Usually, when I think of a pecan pie, I think of something sticky and syrupy and VERY sweet, usually served around the holidays. But what about a light and fluffy summer pie ?
 This one is creamy and crunchy at the same time, sweet with the tiniest hint of salt, and SO delicious it made me wonder where it has been my entire life. 
  At first, as I was browsing recipes, I couldn’t decide which version to try, because of course, as with all pie recipes, there are a million versions. They’re all very similar, but with slight tweaks here and there. Some have brown sugar, some have maple syrup. I finally decided on this one, from a blog called Grits and Gouda. It’s simple and basic, which leaves you wide open to add whatever tweaks you’d like. Oddly, I didn’t fiddle with it at all. I know, I know.. that’s so unlike me, right? But in this case, it sounded perfect as is, so I went with it. It turned out to be EXACTLY what I wanted! Light and fresh, with a flavor that made me think of butter pecan ice cream. I literally had to stop myself from having a second piece!
  If you like pecans, this might be your new favorite dessert! Actually, I think I might need to add this to the holiday repertoire as well. It’s just that good! Enjoy!
 


1 store bought graham cracker pie crust
1 3oz package cheesecake, white chocolate, or vanilla instant pudding mix
1 1/2 cups milk 
1 8oz package cream cheese, softened 
1/2 cup brown sugar
2 tsp vanilla extract
1 8oz Extra Creamy Cool Whip, divided 
1 1/2 cups toasted and cooled chopped pecans, divided 


Whisk together the pudding mix and milk in a medium size bowl. Using a hand mixer at medium speed or a large whisk, beat the pudding mixture 2 minutes or until thickened. Place in the refrigerator to completely set up while preparing the rest of the pie filling. 
Beat the cream cheese in a large bowl until smooth and creamy. Add brown sugar and vanilla and beat 1 minute or until brown sugar is thoroughly blended. 
Stir in the chilled, thickened pudding and 1 cup of the toasted pecans.
Gently fold in HALF of the Cool Whip until no white streaks show. Spoon the pecan cream pie filling into pie crust. Dollop or pipe remaining Cool Whip in the center and/or around the edges of the pie.  Sprinkle with the remaining chopped pecans. Chill at least 2 hours or until firm.


Tips:
Because I prefer to serve my pies in a glass pie plate, I opted to make my own graham cracker crust. I used 2 sleeves of graham crackers (because I like a thicker crust), 2 tbs sugar, and 5 tbs melted butter. ..blitzed them together in a food processor, then pressed the crumbs firmly into a deep dish Pyrex, and baked it for 10 minutes at 350ºF. Then, once it was completely cooled, filled the pie as directed. Perfect!
Feel free to use whipped cream instead of the Cool Whip. Just add 1 1/2 cups cold heavy cream to a chilled bowl, and add 1/2 cup powdered sugar. Using a whisk attachment, whip the cream until stiff peaks form, then use as directed in the recipe. 
For the best pecan flavor, be sure to toast the pecans. Just place them in a dry skillet over medium heat. Stir and heat them just until you can smell them toasting. It happens very quickly, so stay with them. Then immediately remove them from the pan to cool completely before using. I also like to add a tiny pinch of salt as they’re cooling. That’s all there is to it!

Cherry Pie Gooey Butter Cake


 
 I saw this recipe on TikTok from a chef named Christina Tosi. She’s pretty amazing and I’ve seen her very often on cooking competition shows. She always makes food that I immediately want to eat. This gooey butter cake is no exception! I mean, who doesn’t love a gooey butter cake, right? 
 It comes together SO quickly with basic ingredients that you might already have in your pantry, and you don’t even need a mixer. 
 It's the perfect summer dessert and it was a big hit when I made it for my friends. 
Your friends will love it too! 
 


1 1/2 sticks butter
1 yellow cake mix
2 eggs
8oz cream cheese
2 cups powdered sugar
A pinch of salt
1 can cherry pie filling



Heat oven to 350º.
For the crust, melt 1 stick of butter in a mixing bowl. Add the cake mix and one of the eggs. Stir well to combine. Reserve 1/4 cup of this mixture.
Press dough evenly into a greased 9x13 baking dish. Set Aside.
For the filling, soften the remaining 1/2 stick of butter and cream cheese in the microwave, stir together until well combined. Add powdered sugar, a pinch of salt, the other egg, and the reserved dough. Stir well until combined. Pour over crust layer. Now drop spoonfuls of the pie filling here and there over the filling. Bake for 30-35 minutes. It will still be slightly jiggly in the center. Let cool completely and then chill before serving. For an extra pretty touch, dust it with a tiny sprinkle of powdered sugar over the top. So fancy!


Tip:
When you drop your spoonfuls of pie filling over the top, just do them here and there, as the recipe says. You don't want to completely cover the filling layer. You probably won't use the entire can of pie filling. 
This recipe lends itself to a million different variations. Since we were using cherry pie filling, I added a few drops of almond extract, since those two flavors are a match made in heaven. 
If you'd like to serve it for your 4th of July BBQ, you could add a few fresh blueberries on top for the red-white-and-blue of it all. Mix and match any flavor of cake mix with any flavor of pie filling and it will all work! With the yellow cake mix, I’m thinking peach, strawberry, blueberry,,, With chocolate cake mix, I think it has cherry written all over it. I think I’d even add a few chocolate chips over the top, because why not???? For Fall, it would be amazing to use a spiced cake mix with apple filling. Now THAT sounds heavenly! Do you make home made pie filling? Even better! You do you!

Portuguese Coconut Tarts (Queijadas de Coco)

 
 
   
  Every year, around Easter, I always look forward to all of the usual treats. The Cadbury caramel eggs, my carrot cake decorated with a basket weave design (get it?), and of course, anything and everything to do with coconut. So I was pretty excited when I happened upon this dessert that was completely new to me. 
 Have you ever heard of a Portuguese Coconut Tart? If you can imagine that a coconut custard pie and a coconut cupcake had a baby, it would be this. Caramelized and golden on top and custard-y in the center, it's one of the most delicious coconut somethings I've every tasted. True story! I saw the recipe on a short video from Celia Rego, who makes traditional Portuguese dishes, and immediately wanted to make them (mainly because I've never met a coconut I didn't like.) They're super simple to make too! All it took was a few simple ingredients that I just happened to have on hand, and it came together in no time. You don't even need cupcake liners to bake. SO easy!!
 Full disclosure... I may or may not have tweaked this recipe ever so slightly, because I can never leave well enough alone...but I still listed the original recipe as is. I kid you not when I say I had to stop myself from eating them and I PROMISE I'll be making them again and again!
If you like coconut, this is absolutely something you need to try!!
 
 
8oz pkg cream cheese, room temperature
1 stick butter, room temperature
6 eggs
1 cup sugar
2 tbs flour
14oz sweetened shredded coconut 
 
 
Heat oven to 350ºF. 
Using a mixer, cream together the cream cheese and butter until well combined. Add eggs one at a time, mixing well after each. Mix in the sugar, then the flour until smooth. Now stir in the coconut by hand, adding a little at a time so it doesn't clump together. 
  Grease and flour a muffin tin, or spray with baking spray. Fill each cup completely. Tap your pan on the counter to remove any air bubbles. Bake for 30-35 minutes or until golden on top. Cool completely before removing from pan. 
 
 
 
Tips:
There are other versions that have different amounts of sugar and eggs, and there are some that use milk instead of cream cheese. This recipe was so good I don't even feel the need to try any other! 
The only thing I added was a tsp of vanilla extract, and a tsp of coconut extract. I didn't add them to the list of ingredients because I wanted to post it as I first discovered it, but I think the vanilla and coconut extracts were a delicious addition and this is definitely how I'll always make them. Actually....now that I think of it... I wonder how this recipe would turn out if I made them in a mini muffin tin... Hmm.. Only one way to find out!

No Bake Lemon Icebox Pie

 

 
  What do you do when you need to come up with a dessert, such as a fabulous light and fluffy pie, but you have neither the time nor the know how? What do you do? You take ALL the shortcuts and you make this recipe, THAT'S what you do! It only takes a few store bought ingredients, and it comes together in minutes. And it's SO delicious!!! You'll be amazed at how big of a pay off you get despite all the shortcuts. 
 Yes, of course, you could make your own crust by crushing the graham crackers, adding sugar, and melted butter and then pressing it into a pie plate... and you could make your own lemon curd or pie filling... and your own fresh sweetened whipped cream....
 But sometimes you just don't have time for all of that! This recipe solves that problem. I promise you I wouldn't recommend something unless it's worth it. And btw, even though we're taking a few shortcuts, this still counts as a homemade. There. I said it. 
 So if you're short on time, or if you're not a baker at all, try this recipe and everyone will love you for it. ENJOY!
 
 
 
1 ready-made 10" graham cracker pie crust
1 8oz pkg cream cheese, softened
1 14oz can sweetened condensed milk 
1 22oz can lemon pie filling 
1/2 cup lemon juice
Zest from one lemon
1 8oz container Cool Whip, thawed
 
 
  Using an electric mixer, combine the cream cheese, condensed milk, lemon juice, and zest. Using a rubber spatula, fold in l/2 of the lemon pie filling by hand. Now do the same with half of the Cool Whip.
 Pour the filling into the ready made pie crust, smoothing over the top. Refrigerate for an hour or two. Remove from the fridge and spread the other half of the pie filling over the cream filling. Decorate the top with remaining Cool Whip. Garnish with a fresh lemon slice, if desired. Refrigerate until ready to serve. Even better, make it the night before so it'll set up in the fridge overnight. 
 
But for the quickest method, forget the extra chilling time. Just pour the cream mixture into the crust, smooth over the top, then carefully spread the remaining pie filling on top. You could even get fancy and give it a little swirl. Now decorate the top with the remaining Cool Whip. You'll have more of a mousse texture instead of a slice of pie, but it's delicious now matter how you do it. 
 
 
 
Tips:
The only thing I'd change about this recipe (if I were feeling so motivated) is that I'd make my own graham cracker crust. The store bought ones taste great and they're super convenient, but I do like a thicker crust, which also lends itself to serving a slice of pie in one piece without so much crust breakage. But you do you!
Btw, if you're wondering why it's called an "icebox" pie... Before there were today's electric refrigerators, there were iceboxes, which were insulated wooden boxes with a top compartment for large blocks of ice that cooled a lower compartment as the ice melted. So I guess now this pie should be called a Refrigerator Pie, but we don't need to be that technical.

Tollhouse Cookie Bars



   Here’s a good one to keep in your recipe arsenal. It’s just a simple cookie bar, but it hits all the right notes, and everyone goes crazy for them every time I make them. They’re a great picky-uppy kind of sweet treat and the recipe comes from a blog called Midwestern Homelife. Of course, I tweaked it ever so slightly because I can never leave well enough alone. 
 They just hit the spot whenever you feel like having a little something sweet, and you literally don’t even need an occasion to make them! On the other hand, they’re the perfect thing to make for your special somebody… or as a boost for your nephew who has a crazy 48 hour work shift coming up….   or as a huge thank you to your ANGEL of a next door neighbor who, without asking, cleared your walkways with his snowblower… TWICE. Come to think of it, I think I need to make another batch, just for myself, because why not??? I think you need to make some too!!

 
 

2 1/4 cups flour
1 tsp baking soda
1 1/2 tsp salt
1 cup butter, (2 sticks)
3/4 cup sugar
3/4 cup brown sugar
1 tsp pure vanilla extract
2 large eggs
3 cups mix-ins (any kind of chips, chopped chocolate or nuts)



Preheat the oven to 350ºF. 
Spray a 9 x 13 pan with nonstick cooking spray, then line it with parchment paper with an overhang for easy removal. 
In a small bowl, stir together the flour, baking soda, and salt.
In a large mixing bowl, use a hand or stand mixer to beat the butter, brown and white sugars, and vanilla extract until creamy. Add the eggs one at a time, mixing well between each one. Gradually add the flour and mix until combined. The dough will be very thick. Add the mix-ins. Set aside some chocolate chips or chocolate chunks for the top. Mix in the chocolate chips and nuts on low speed until combined. 
Press or spread the dough evenly into the prepared pan. Sprinkle reserved chocolate chips over top of the dough. 
Bake for 20-25 minutes or until the top is golden brown and the edges are set.  
Cool the bars in the pan on a wire rack. 


Tips:
It may seem like overkill to spray the pan and then line it with parchment, but I still like to do both. Just that little quick spray helps the parchment paper stay in place for when you're pressing the cookie dough into the pan. Otherwise, the paper slides all over the place. 
The original recipe only called for 1 tsp salt, but I added the extra half tsp because I think it needed it. I also only ever use salted butter, but you do you. 
The mix-ins I used were chocolate chips, butterscotch chips, and white chocolate chips, with mini chocolate chips over the top.  I think I might do peanut butter chips next time. Chopped pecans, walnuts, and/or macadamia nuts would also be awesome. Use anything you like!

Soft and Chewy Lemon Cookies


  I was recently on the hunt for a really good go-to lemon cookie, and as always I had certain search criteria: Of course I wanted a strong hit of lemon, but then I also wanted the texture to be fabulously crispy on the outside and chewy on the inside.... definitely not cakey, but kind of like a sugar cookie, only a perfect lemon version. With me so far?
 Then I found this recipe from a blog called Kroll's Korner. It's literally everything I just described, and I seriously could've eaten the entire batch. Not even kidding. SO GOOD! It was the perfect thing to bring to my friend, Mary, who had requested a batch of lemon cookies. 
 So, now I can add another delicious recipe to my repertoire for all of my friends who are constantly asking me for "anything lemon." Pretty sure this is now my new go-to recipe. Pretty sure it'll be yours too!  
 
 
 
12 tbs (1 1/2 sticks) unsalted butter, softened
1 1/2 cups sugar
1 tbs lemon zest
1 large egg
1 large egg yolk
2 tsp. lemon extract (or 1 tsp. each lemon and vanilla extract)
3 cups all-purpose flour
1 tsp baking soda
1 tsp cornstarch
3/4 tsp salt
2 tbs lemon juice
1/4 cup granulated sugar, for rolling & garnishing

 
 
 Beat the butter, sugar, and lemon zest in a stand mixer fitted with the paddle attachment for about 3-4 minutes or until light and fluffy, scraping down the sides of the bowl as needed. (Pro tip: you can rub the lemon zest and sugars together between your fingertips to help release the natural oils in the lemon and infuse even more lemon flavor into the cookies). Add eggs and extract(s), mix again.
Add the dry ingredients in a mound with baking soda on top.
Add the lemon juice on top of the baking soda, it will foam = activated.
Mix just until combined. Do not over mix.
You can refrigerate the dough now as is or scoop and roll into balls and then refrigerate. Balls will be about ~1 ½-2 tbsp. in size. Refrigerate at least 1 hour.
Preheat the oven to 325°F.
Add about 1/4 cup granulated sugar into a bowl and roll the balls in the granulated sugar.
Bake for 10-12 min. DO NOT OVERBAKE. These need to be very soft and chewy.
Swirl a cup around the cookies when they come out of the oven (while they’re still warm) to make them perfect circles.
Sprinkle the tops of cookies with more granulated sugar for a sparkly look and lemon zest if desired.
Rest on a cookie sheet for just 5 minutes then carefully transfer to a wire rack to cool completely. 
They will look puffy out of the oven but settle as they cool.
 
 
Tips:
 The most important thing is to make sure you chill the dough before baking. I opted to mix up the dough, roll it into balls, then in sugar, then refrigerate them on a parchment lined tray. I chilled them for over an hour, and then took the trays right from the fridge to the oven. They turned out perfectly! I know the directions say to swirl a glass over them to make them perfectly round, but there didn't seem to be any need, at least this time.
I used a cookie scoop, and I wound up with about 2 1/2 dozen cookies. If you'd like to double the recipe, I would suggest mixing up two batches instead of doubling the ingredients. It seems to me that some cookie recipes work better when you mix up separate batches instead of doubling. I'm talking to YOU, Snickerdoodles. 
Also I think I'd like to add more lemon zest next time. More is more, right?! I also wondered how it would taste if I used orange and/or lime zest instead of (or in addition to) the lemon. I think I need to make another batch and try it!

Peanut Butter and Jelly Krispie Treats

 

  We all know and love the classic Rice Krispie Treats. Always good, always a hit. But what if we add a little spin to them? NOW we're elevating them to a new level of delicious! 
 I recently hosted a party for some of my dearest and most cherished friends, and I was trying to think of dessert ideas. I kind of like the idea of doing an adult dinner menu, but then choosing something whimsical for dessert. I thought of doing ice cream sundaes. Or S'mores. But then I thought oooo how 'bout rice krispie treats?! But lets have some fun and do them in an elevated way. So in this case, I kept the childhood whimsy and made them with peanut butter and jelly, but instead of doing store bought grape jelly or strawberry jam, I made my own bumbleberry jam. (that's a mixture of strawberry, blueberry, blackberry and raspberry). I also wanted the treats to be nice and chewy, so I added the secret ingredient... sweetened condensed milk. It makes them absolutely pull-apart chewy and it's the perfect thing to keep them from becoming hard and stale. That was all it needed! One bite and it was childhood nostalgia all over the place. Everyone loved it! Who knew? And come to think of it, why haven't I done this before??
 So if you love a good PB&J, give this one try. There's a reason a classic is a classic. Classic flavors, classic treats. And putting them together is the fun twist! Enjoy! 
 
 
 Non stick cooking spray
 1/2 cup butter
1 (10oz) bag mini marshmallows
1/3 cup sweetened condensed milk
1/2 cup creamy peanut butter
1 tbs vanilla extract
1 tsp kosher salt
6 cups rice cereal
1 cup jam or jelly, any flavor, home made or store bought


Spray a 9x13 pan with nonstick cooking spray. Line with a long piece of parchment paper that extends up and over two opposite sides of the pan.
In a large pot set over medium heat, melt the butter. Add the marshmallows and stir with a flexible spatula until melted and smooth, about 5 minutes. Stir in the sweetened condensed milk, peanut butter, vanilla, and salt until combined.
Remove the pan from the heat and fold in the rice cereal until combined. Transfer the mixture to the prepared pan and press down lightly to create an even layer. Use an offset spatula to spread the jelly over the treats. Let the treats set up on the counter for at least 1 hour. To remove them from the pan, grip the parchment overhang and lift. Slice into squares and serve.
 
 
Tips:
The original recipe (which is actually from The Today Show, btw) directed you to press half of the mixture into an 8x8 square pan, spread with jelly, then press the other half on top, to make a literal PB&J sandwich. I think that makes too thick of a bite and decided to do the 9x13 pan instead, with the jelly on top. But if you'd like to do the sandwich, go for it! You'll only need about 1/2 cup of the jelly. 
Like I said, the key to making chewy treats is the sweetened condensed milk. And there's also one other key ingredient, which is, believe it or not.. SALT!  Don't omit it! It really makes the peanut butter taste like peanut butter. And if you really want to pump up the peanut flavor, add some chopped peanuts! Because why not???

Strawberry Cobbler

 

 
 Here’s an easy PERFECT dessert for your 4th of July BBQ.  It's SO easy, you don't even need a mixer. 
I was looking for easy strawberry desserts, and I found this one from Preppy Kitchen. 
It's super easy (even for the novice baker) and it's so delicious, your guests will be fighting over the last bite. And it's an absolute MUST that you serve it warm with a scoop of vanilla ice cream. Pretty sure it's a law. Top it with a few fresh blueberries and it screams 4th of July! That's just all there is to it.
Boom. 


2 pounds fresh strawberries, hulled and halved
1 cup granulated sugar, divided
9 tbs unsalted butter 
2 1/4 cups all-purpose flour
2 1/2 tsp baking powder
1 1/4 cup milk 
2 tsp vanilla extract
1/2 tsp kosher salt



Preheat the oven to 350°F.
In a large bowl, stir together the strawberries and 1/3 cup of the sugar. Set aside to macerate. Add the butter to a 13x9-inch baking dish and place in the preheated oven until the butter is melted, about 10 minutes. Meanwhile, in a medium mixing bowl, whisk together the flour, baking powder, salt, and remaining 2/3 cup of sugar. Add the milk and vanilla extract, and stir just until combined. Carefully remove the baking dish from the oven and pour the batter over the melted butter. Spoon the strawberries over the batter, leaving any extra liquid in the bottom of the bowl. 
Bake for 55 to 60 minutes or until the batter is golden brown and the strawberry juices are bubbling. Let cool for 15 minutes. Serve with vanilla ice cream. 



Tips:
When you macerate the strawberries, they'll give off lots of juice, which will make the cobbler too wet if you just dump the whole bowl in. The original recipe said to discard that liquid. Don't you dare!! Thats liquid deliciousness!! Use it as a fabulous syrup to pour over your finished cobbler, vanilla ice cream, waffles, or pancakes. 
Don't like strawberries? Use any other berries or stone fruit. Raspberries? Blackberries? Peaches? How 'bout a combination of fruits? Want to add some cinnamon? Go for it.  It will all work. 
I used salted butter because it's what I had on hand. That little bit of extra salt was actually my favorite thing. Use what you have! 
If your fruit is not as sweet as you'd like, just add more sugar. Frankly, I didn't even measure 1/3 cup. I just poured it over the berries and gave them a toss. Yum.

Marshmallow Frosted Pistachio Bars




 I recently hosted a little get together with a few of my family and friends to watch the movie, Wicked. 
Now, unless you live in a cave, you likely already know that Wicked is about the witches from The Wizard of Oz, which clearly means that my menu had to be green and pink. I mean, obviously. 
 For my pink "Glinda the Good" dessert, I made little strawberry cheese cake mousse cups, which were pretty fabulous, I must say. And for my green "Elphaba, the Wicked Witch of the West" dessert, I made these cute little pistachio squares. And guess what!?! They were were an immediate hit! 
 Crispy chewy pistachio cookie bars covered with fluffy pillowy marshmallow frosting. What's not to love? And upon tasting them, my sister said "I'm gonna need this recipe." So here it is! 
They're SO simple! You just mix and bake, nothing crazy. Just a quick and easy recipe, and you probably already have most of the ingredients in your pantry anyway. Perfect, right? 
 So, if you haven't seen Wicked, you absolutely should. It's literally perfect. And even if you're not having a wickedly swankified Ozmopolitan party, you should still make these cookie bars. I know you'll love 'em!
They're WONDERFUL!



For the Bars:
1 cup salted butter, softened
1/2 cup granulated sugar
2 large eggs
2 tsp pure vanilla extract
2 (3oz)boxes instant pistachio pudding mix
1/2 tsp baking soda
2 cups flour
1/4 tsp salt 
1 cup white chocolate chips
1/4 cup chopped pistachios


Preheat oven to 375°F and prepare a 9 x 13" baking dish with baking spray or parchment paper .
Cream together butter and sugar for 2 to 3 minutes on high speed until fluffy. 
Add in eggs and vanilla and mix well.
Add pudding mix, baking soda, flour, and salt. Mix on low speed until combined. 
Add in white chocolate chips and gently stir into the dough.
Spread evenly into bottom of prepared baking dish and bake for 15 to 17 minutes. 
They will be soft in the middle and slightly crispy around the edges, just like a cookie. 


For the Marshmallow Frosting:
1 cup butter, room temperature
14 oz Marshmallow Fluff
2 cup powdered sugar
2 tsp vanilla extract

Beat butter and powdered sugar until fluffy and well mixed.
Gently mix in fluff and vanilla extract until mixed well.

 
When the bars are completely cooled, spread with frosting. 
Top with chopped pistachios, if desired. 
Cut into bars. 


Tips:
Be careful not to over bake the bars, otherwise they'll turn out hard and crumbly, rather than soft and chewy. 
If your frosting is a little too runny, add a bit more powdered sugar. Frosting can be made in advance and kept in an airtight container in the fridge for several days. 
You can easily cut this recipe in half, and bake in an 8x8 square baking pan. The bake time remains the same!

Very Strawberry Brownies

               

  Here's a quick and easy dessert recipe to make for your Valentine. Very cute, very pink, and yes, VERY strawberry! Now, I know you're probably thinking "if they're not chocolate, why are they still called brownies?" Well, it's the brownie TEXTURE we're going for here. They start out with a regular cake mix, but then when you pour the glaze over the still warm pan, it kind of sinks in a little bit, giving them a more brownie like texture. 
  So here's the thing.. when I was first looking at this recipe, there's were no extracts or dried strawberries, and I worried that it might wind up tasting like that artificial strawberry flavor (you know, like strawberry quik?) So I decided to amp it up a little. I saw another version of it that included the strawberry extract... but the aha moment was when I added the strawberry powder to it. BOOM. Huge strawberry flavor!! I thought "Why am I not adding this to every strawberry thing ever?" Definitely a game changer. 
 I made them for a group of friends at a recent party I hosted. One of my friends said they're VERY STRAWBERRY so that became the name! 
 Make them for your Valentine to show them how much you love them and they'll love you right back!
 
 
 
Brownies
1 box strawberry cake mix
2 large eggs
1/3 cup salted butter, melted
1 tsp strawberry extract (optional, but recommended)
1 tbs freeze dried strawberry powder (optional, but recommended)

Glaze
3/4 cup powdered sugar
2 tbs strawberry preserves
1 tbs lemon juice
1 tbs cream


Heat oven to 350F.
Line a 9x9 baking pan with parchment paper, leaving about 2 inches hanging over the edge. Set aside.
In a mixing bowl, combine all brownie ingredients. Batter will be very thick. Press evenly into prepared pan. Bake about 20 minuted or until an inserted tooth pick comes out clean.
Let it cool slightly, but leave them in the pan.
Mix all glaze ingredients until smooth. Pour over warm brownies.
Cool or chill completely.
Using the parchment overhang like a sling, lift the entire batch out of the pan before cutting into 9 large squares or 16 small ones.
Garnish with a strawberry on top of each one as shown, if desired.


Tips:
The extract and freeze dried strawberries are optional, but seriously they made all the difference for the recipe. Thats what makes them VERY strawberry! In fact, I don't think I'd ever make this recipe without them. You can easily find them on Amazon.
Also, you can double the whole thing and bake in a 9x13 pan. 
Btw. I saw a tiktok video with this recipe and she called them "pinkies", but I just couldn't bring myself to do it.

Caramel Pumpkin Oatmeal Squares

  
 Here's an easy dessert that is perfect for all your little ghouls and goblins. Firstly, it's what I call a "picky uppy" dessert, which means you can just grab it and go. And secondly, the recipe uses one of my favorite techniques: one dough is used for the bottom crust as well as the topping! That just makes things so much easier. And they're delicious! Sort of like a cross between a pumpkin square and an oatmeal cookie. It comes together pretty easily too. 
Definitely keep this recipe readily available the next time you're feeling like a picky uppy pumpkin treat!

 
2 c. flour
2 c. old fashioned oats
1 1/2 c firmly packed light brown sugar
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
3/4 tsp ground ginger
1/4 tsp nutmeg
1 cup (2 stick) butter, melted
1 cup canned pumpkin
1 tsp vanilla extract
7 oz (1/2 of 14-ounce package) caramels, unwrapped
2 tbs milk 
 
 
Preheat oven to 350°F. 
Mix flour, oats, sugar, baking soda, salt and spices in large bowl. Add butter; stir until mixture is well blended and forms coarse crumbs. Reserve 1/2 (about 2 1/4 cups) for the topping. Add pumpkin and vanilla to remaining mixture in bowl; stir until well blended. Press evenly into bottom of greased foil-lined 13x9-inch baking pan. Set aside.
Microwave caramels and milk in medium microwavable bowl on HIGH 2 to 3 minutes or until caramels are completely melted, stirring after every minute. Let stand 1 minute. Pour over pumpkin mixture in pan, spreading to within 1/2-inch of edges. Sprinkle with reserved crumb mixture.
Bake 30 to 35 minutes or until light golden brown. Cool in pan on wire rack. Lift from pan. Cut into bars.


Tips:
This recipe is from McCormick. Ya know, the spice people. And I'm sure they're very excited to have you use cinnamon, ginger, and nutmeg. But I like to just use a tbs of pumpkin pie spice blend. It's just easier. Usually I make my own, which also includes allspice, but you can also buy it already blended. And I always add more than the recipe says. But you do you!

Blueberry Cream Cheese Bars

 


  Whenever my family has an occasion to celebrate, my first question is always "what can I bring?" What can I say..... that's just how I was raised. My Dad used to always say "when you go to a party, you ring the doorbell with your elbow." (meaning your hands are full, carrying whatever you brought to the party). Most times it'll be an easy dessert, or something "picky uppy", which is a highly official term we use to describe party finger food. Sweet or savory, it's always the perfect thing for a party. So when my nephew Gregger and his newly intended, Britny, announced their forthcoming nuptials, I immediately started looking for a picky uppy something to bring to their engagement party. 
  Sometimes, I'll have something specific in mind, which often requires a trip to the store, but in this case, I eyed the fresh blueberries that I already had in my fridge, and that's the direction I went. A few more ingredients from my well stocked pantry, a google search, and this is where I landed. 
 It's my own adaptation of a recipe I found on a blog called Dance Around the Kitchen. Simple. Easy. And best of all, I already had all the ingredients. Perfect!
 So lets talk about the recipe for a minute. I've seen this method before. You make one recipe for the crust, then use half of it for the bottom layer, add a middle filling layer, and then use the rest of the crust crumbled over the top. Great. But here's the thing... it always seems to me that there isn't enough crust dough to go around. I like to make a solid bottom crust, and enough crumble to almost cover the top. So my adaptation was just to bump up the amounts a little to make more crumble crust/topping. I suppose I should have done some math to increase the proportions equally, but I didn't. I just sort of added more to each measure. I guess it's very forgiving because it turned out perfectly. And it had the perfect amount of crust!
   So, congratulations, Gregger and Britny! I'm so thrilled for both of you! And I'm glad the blueberry bars were a hit at your engagement party!
 And the next time you need to "ring the doorbell with your elbow', try this recipe. 
You'll love 'em!


1 cup butter softened
1 cup sugar
1 cup brown sugar
3/4 tsp baking soda
1 tsp salt
2 cups flour
2 cups quick oats (uncooked)
8 oz cream cheese (room temp)
1 14oz can sweetened condensed milk
1 tsp vanilla extract
1 egg yolk
1 cup fresh or frozen blueberries (or raspberries)
Sprinkle of cinnamon, optional



Preheat oven to 350ºF
Prepare a 9x13 pan by lining with parchment paper or coating with cooking spray.
 In a large bowl, mix the butter, sugar, and brown sugar. Stir in the baking soda, salt, flour, and oatmeal until combined. Press half of the mixture into the bottom of the pan and bake for 13 minutes.
While the bottom layer is baking, make the filling.
Place the cream cheese in a large bowl and stir until smooth. Slowly add the sweetened condensed milk with a whisk to make sure it's mixed well. Then add the vanilla and egg yolk. 
Once the bottom layer is done baking, (no need to cool), pour the cream cheese mixture over it and carefully spread it out. Add the berries on top of the cream cheese layer. Sprinkle the remaining oatmeal crumble on top and press it down lightly. Sprinkle the top with cinnamon, if desired. 
Bake for an additional 20-25 minutes or until the edges are golden brown. 
Let cool completely, then chill for at least an hour before cutting; store in the refrigerator.


Tips:
When stirring the cream cheese, be sure to get all the lumps out before adding the condensed milk. It'll be harder to get the lumps out if you add them all at once! Don't ask me how I know...
If you're not a fan of blueberries, try something else! Cherries would be great. Pineapple would be amazing. Diced strawberries would be awesome. Or combine whichever fruits you like. Diced peaches and raspberries would be fabulous. You do you!
Btw, I added cinnamon, but you don't have to. It just seemed to me that the crumble is very similar to an oatmeal cookie, so why not? Turned out to be a good decision!

Impossible Coconut Pie


 
Have you ever heard of an "impossible" pie? This was something that became popular in the mid 1970s and it still remains one of my all time favorite recipes. So, why is it called an Impossible Pie? Well, it makes it's own crust! What?? But that's impossible!! Nope, not at all. You just throw everything into a blender, pour it into an empty pie plate and bake!! Fun, right??! It's the baking mix in the recipe that sinks down to the bottom while it bakes, and that's what forms its own base. How cool is that??
 Over the years, there have been many variations of Impossible pies, even savory versions, but coconut was the original, so I'll stick with it. It really is just as easy as it sounds, and it comes together in no time at all. So, if you're looking for a quick and easy custard pie, give this one a try! And be sure to let me know if you find any other "impossible" recipes!! I'd love to try 'em!
 
 
 
2 cups milk
1/2 cup baking mix such as Bisquick*
1/4 cup melted butter
3/4 cup white sugar
4 eggs
1 tsp vanilla extract
1 tsp coconut extract (optional)
2 cups flaked coconut
 
Heat oven to 350ºF.
Set aside 1 1/2 cups coconut.
Place all remaining ingredients in a blender. Blend on high for 3 minutes,
Pour into an empty pie plate. Top with reserved coconut. Bake for 30-40 minute or until set. 
Serve with sweetened whipped cream, if desired. 
 
 
 *You can make your own baking mix by combining 1 cup of flour, 1 1/2 teaspoons of baking powder, 1/2 tsp of salt, and 1 tbs of oil or melted butter.
 
 
Tips:
-Be sure to use a BLENDER for this, and not a food processor or mixer. You really want everything to be completely pureed together to make one smooth batter. And be sure to blend it for the full 3 minutes!
-Whenever I make a coconut something, I like a LOT of coconut flavor, so I always add just a little coconut extract. It wasn't part of the original recipe, just my own addition, but it really goes a long way!

Chocolate Cobbler


 
 Are you a chocolate lover?? And do you like ooey gooey decadence? Well, if you are, and you do,  then I think I've found the perfect dessert for you! I think this dessert is possibly the ooiest and gooiest thing I've ever tasted. Not even kidding! Pretend chocolate pudding and a brownie had a baby. THAT's how fudge-tastic this is. SO GOOD!
 Now, I must confess that as much as I love chocolate, sometimes the chocolate dessert isn't always my first choice. Most times I would choose the hot apple pie with caramel....or the carrot cake with cream cheese icing... or the strawberry cheesecake. But sometimes.. well.. what can I say...sometimes, you know you just have to have something chocolate. I'm pretty sure that THIS is the dessert that will hit that spot. The recipe is from Southern Living, and it's absolutely delicious. Simple too!!
 So the next time you're feeling like you need a little rich chewy ooey gooey chocolateness in your life, give this recipe a try. BOOM.
  




Preheat oven to 350°F. 
Place butter in an 11- x 7-inch (2 qt) baking dish. Place dish in oven (the oven does not need to be fully preheated). Heat until butter melts, about 10 minutes. Remove from oven.

Cream Cheese Cookies

 

 There are some ingredients that I always like to have on hand. Of course you want to be well stocked with your basic baking ingredients... eggs, milk, sugar, brown sugar, flour, baking soda, baking powder, vanilla extract, and butter. But then there are the extras like chocolate chips, and nuts, and pie fillings, flavored extracts, and sprinkles.. and definitely CREAM CHEESE. 
 So, when it comes to cream cheese, for some reason, whenever I'm doing my shopping, I always question how much I have at home and whether or not I need to get more. And as a result, I always wind up getting more.. and then I get home and realize I already have 4-6 pkgs, and didn't need any at all. This is also the same sort of thing that happens with poultry seasoning as I'm doing my Thanksgiving food shopping.... do I have enough? hmmm.. I better get more just in case... but that's another story..... anyway. My dear friend, Janet, recently told me of a cream cheese shortage.... um...I think it's all at my house. yeah, sorry about that!
 So I found myself with a bunch of cream cheese and nothing to do with it. I thought.. hmm.. maybe a dip? a cheese danish? a pound cake? But then I thought, well, it's the holiday season... how 'bout some cookies? Great! Did a quick search, found this recipe on a blog called Preppy Kitchen. Looked easy enough, so I went with it. They taste great!!! But here's the thing.... they bake up to be more cakey than cookie. Know what I mean? Delicious, but not exactly the cookie I was picturing. So here's what I'm thinking.. instead of having them with a tall glass of milk.. have them with a cup of tea instead. Perfect! I think that's a much better vibe. They're sweet with just a hint tang from the cream cheese. SO good! 
 Now I know what to do with all that extra cream cheese!
 
 
 
1/2 cup unsalted butter, room temperature
4 oz cream cheese, room temperature
1 cup granulated sugar  
1 egg room temperature 
2 tsp vanilla extract  
1 3/4 cups flour  
1/2 teaspoon baking powder 
1/2 tsp salt
 
 
Whisk together the flour, salt and baking powder in a medium bowl and set aside.
Using a stand mixer fitted with a paddle attachment, or an electric hand mixer, cream the butter and cream cheese together. Add the sugar and beat until light and fluffy. Add the egg and vanilla and mix until combined. Scrape the bowl down and mix one more time to combine. Add the dry mixture into the wet and mix on low until just combined. Use a spatula to scrape the bottom and give the mixture one last mix then cover and chill for at least an hour.
Heat oven to 375ºF. Portion out roughly two tablespoon-sized pieces and roll into a ball. The dough will be sticky so it's best to dampen your hands a bit and just wash them when they get a bit covered. Place about two inches apart on a baking sheet lined with parchment paper or a silpat and bake for 10 minutes or until the edges are set and just turning golden.    Tips:Be sure to start with room temperature ingredients! It's makes a big difference!  I added a few sprinkles on top right before baking, just to make them a little more festive, but you do you!

Joey's Classic Cheesecake

 

 I was given a version of this recipe about a million years ago by my sister-in-law, Janet. She had made it and brought it to one of our family events, and after one bite I decided that this was the best cheesecake I had ever tasted. As she was describing the recipe to me, she said it was originally a pumpkin swirl cheesecake and that she just omitted the pumpkin ingredients. I took it a step further and tweaked it ever so slightly. Now it's just perfect!
 Over the years, I've made it SO many times for cast parties, holiday parties, birthdays, you name it. And it's ALWAYS a big hit. At one point, I was making it so often that the corner store next to my apartment specially ordered 3 lb blocks of cream cheese just for me. I guess they were getting tired of having to restock their supply of cream cheese every time I baked a cheesecake. LOL (true story!)
 Full disclosure... I actually debated whether or not to share this recipe or keep it to myself, but then I figured it would be a shame not to share it. It's just so good. If you like a rich creamy cheesecake, then this is definitely the one for you. I honestly don't think you'll find anything better!





Crust:

2 sleeves graham crackers (they usually come 3 sleeves to a box)
2 tbs sugar
5 tbs melted butter
 


Preheat oven to 300ºF.

Using a food processor fitted with a metal blade, process graham crackers and sugar until finely crushed to crumbs. Add butter and process until well combined. Using the palm of your hand, press FIRMLY into bottom of a 10" spring form pan. Place in oven and bake for about 10 minutes or until lightly toasted. Remove from oven and set aside.
 


Cake:

6 (8oz) pkgs Philly cream cheese

1 1/2 cups sugar

3 large eggs

1 tsp. pure vanilla extract

1/2 cup sour cream

1/4 cup heavy cream


 
Combine all ingredients in the order listed, making sure to mix well after each addition. (be sure to mix eggs into batter one at a time). Pour onto prepared crust. (No need to cool the baked crust). Place in oven and bake for one hour. Without opening the oven door, (resist the urge to open it!!) turn the oven off and leave cake in oven for at least 2 more hours. I usually just leave it there until the oven cools and I can remove it without using oven mitts. Remove from oven and then remove the outer ring of the spring form pan. Allow to cool to room temperature, then put it in the fridge to chill. (This step is important because it'll crack in a huge way if you put it directly into the fridge from the oven). Once it is chilled, serve plain or with your desired topping. 
 To serve it as it's shown in the photo, top it with the prettiest strawberries you can find, then add a tbs of water to a little bit of jam, and brush it onto the berries for a shiny glossy finish!





Tips:

This is an extremely versatile recipe and you can change it to make whatever kind of cheesecake you'd like. You can add chopped oreos to it, mini chocolate chips, chopped snickers bars, really anything you can think of. You can take a portion of the batter and add chocolate syrup, or pumpkin and spices, or peanut butter, then swirl your flavored batter with the the plain batter for a swirled cheesecake, or just top it with your favorite fruits, or berries or even caramel. There's really no wrong way to do it and it turns out every time. I also like to play with different crusts. For a chocolate chip cheesecake, I make the crust out of oreos. For a peanut butter swirl cheesecake, I make the crust out of nutter butters. Most times I use graham crackers or vanilla wafers for the crust. Again, the sky's the limit on cake/crust combinations. Oh, and be sure all ingredients are at room temperature before you start. That's a biggie. It makes a HUGE difference, more than you'd think it would. The batter is smoother, the finished cake is creamier, and it helps reduce cracks on the top of the cake. And if your cream cheese is room temperature, you'll be less likely to burn out your mixer. (it used to happen to me all the time until I finally bought a Kitchen Aid!) Also, be sure to use the best ingredients. Do NOT use low fat this, or imitation that. If you're going to have cheesecake, then have REAL cheesecake. There's just no substitute!

Red Velvet Brownies with Cream Cheese Frosting

 


  Are you in the mood for something chocolate? Well, here’s a recipe that ticks all the boxes for what you want in a brownie recipe, and will surely satiate all of your chocolate cravings! Now, usually I would save my best chocolate recipes until Valentine’s Day (especially RED ones!), but this one just seemed so festive, I thought it would be perfect for Christmas.
Full disclosure, I’m not even sure whose recipe this is. I made them ages ago, and am just now getting around to posting the recipe. Usually I’d make a note of where I happened to find it, but for some reason that didn’t happen this time. Oh well! I guess I was in a rush. What can you do? So if this recipe is yours, please let me know!
 In the meantime, they’re the perfect "picky-puppy” dessert for your holiday party, and I just love how pretty they are. Easy too! I promise your family and friends will love them! Enjoy!


For the brownies:
1 cup unsalted butter
3/4 cup semi-sweet chocolate chips
2 cups white sugar
1-2 tbs red food coloring
1 tsp vanilla extract
4 large eggs
1 3/4 cups all-purpose flour
1 tbs white vinegar


For the frosting
1/2 cup unsalted butter softened
8 oz cream cheese
1 tsp vanilla extract
1/4 teaspoon salt
3 cups powdered sugar



Preheat the oven to 350ºF.
Lightly grease a 9x13 inch pan.
 Add the butter and chocolate chips to a large heat-proof bowl. Microwave on medium power for 1 minute. Remove from the microwave and stir. Repeat the process until they're melted together. Whisk in the sugar, vanilla extract, & red food coloring. Allow the mixture to cool for a few minutes, then whisk in the eggs. Only whisk until just combined. Gently fold in the flour with a rubber spatula or wooden spoon. Stir in the vinegar. Pour/spoon the batter into the prepared pan. Bake for 25-30 minutes or until the top looks set and an inserted toothpick comes out clean or with a few damp crumbs. Be careful not to over bake or brownies can get dry. Cool completely.


In a large bowl, beat the butter until fluffy (about 2 minutes). Mix in the cream cheese until just combined. Then add in the vanilla extract & salt. With the mixer on low speed, beat in the powdered sugar about 1 cup at a time until the desired sweetness & thickness is reached. Frost the cooled brownies with a flat knife, and optionally decorate with sprinkles.


Tips:
-Feel free to decorate them however you like! I love how the cream cheese frosting makes it look they’re covered with a blanket of snow. Be creative!
-As always, whenever I make a 9x13 pan of any kind of dessert squares, I like to line the pan with parchment paper before baking. Just give the pan a light spray, then place a large sheet of parchment in the pan, with a few inches extra hanging over the sides. Then fill and bake as directed. When the pan is completely cooled (or chilled), use the extra “hanging over” bit of the parchment as handles to lift the entire batch out of the pan in one go. Now you can use a large sharp knife to make perfectly clean cuts, and you won’t ruin your pan!

Harvest Apple Cupcakes

 

  

  I was recently trying to decide what to do with a couple dozen apples, and I just couldn’t make up my mind. If you know me, you know apple desserts are my very favorite (especially with vanilla ice cream on top!) Hmm.. so many to choose from. But then I thought, wait.. are there any apple desserts I haven’t already shared? I’ve done pies, cakes, fritters, brown betty, pan dowdy, blondies, cookies, crisps…. but what's left? Then I thought.. AHA! Cupcakes!!
 So here we are. The perfect apple cupcake recipe, courtesy of Betty Crocker.
 It’s very straight forward. Mix your wet ingredients, add your sifted dry, spoon into cupcake tins, and bake. Boom. Easy, right? And then you cool and frost them with your favorite frosting. The recipe calls for cream cheese frosting, so who am I to argue??  But feel free to use whatever floats your boat.
 Perfect recipe. Give ‘em a try!

1 1/2 cups sugar
1 cup vegetable oil
3 eggs
2 cups flour
2 tsp ground cinnamon
1 tsp baking soda
1 tsp vanilla
1/2 tsp salt
3 cups chopped tart apples
1 cup coarsely chopped nuts (optional)


For the Frosting:
2 pkgs cream cheese
2 sticks butter
1 tsp vanilla extract
4 cups powdered sugar



Heat oven to 350°F.
Place paper baking cup in each of 24 regular-size muffin cups. 
In large bowl, beat sugar, oil and eggs with electric mixer on low speed about 30 seconds or until blended. Add flour, cinnamon, baking soda, vanilla and the salt; beat on low speed 1 minute. Stir in apples and nuts (if using).
Divide batter evenly among muffin cups, using about 1/2 cup batter for each. 
Bake 30 to 35 minutes or until toothpick inserted in center of cupcake comes out clean. Cool 10 minutes; remove from pans to cooling racks to cool. 
To frost cupcakes:
Combine frosting ingredients in order listed, until well mixed. Pipe or spread frosting onto each cooled cupcake. Store frosted cupcakes or any remaining frosting covered in refrigerator. 

 

Tips:
As you can see in the ingredients list, the original recipe adds chopped nuts, but I decided to make them optional. You do you!
When combining your frosting ingredients, be sure to turn you mixer to LOW speed, especially when adding the powdered sugar. Trust me on this!
Oh, also, the original recipe called for a can of store bought cream cheese frosting, but I prefer to make my own. Again, you do you!

Applesauce Pie


 

 OK, here’s a question for you. Are you a PIE Person?  The reason I ask is that there are people who like pie, and people who don’t really care for it. But then there are people like me…. I can honestly say that I’ve literally never met a pie I didn’t like. Fruit pies, custard pies, savory pies, meat pies, you name it, I love every one!!
 So that gives you a strong inkling of why Thanksgiving is my favorite holiday!
So, what kind of pie is my favorite? Well, apple pie, of course, and for Thanksgiving, pumpkin pie is a definite must! And come to think of it, I’ll never say no to a pecan pie… or a mince pie like my Mom used to make… you can't go wrong with any of them! They’re all classics! Clearly, there’s a reason these pies have stood the test of time.. they’re all delicious!!
So that got me to thinking about what other kinds of old-timey classic type pies I could find.
 It didn’t take me long to find this recipe from one of my favorite you tubers, Miss Lori, over at Whippoorwill Holler. She has some of the BEST pie recipes, and I want to try every single one of them!
And when I saw how easy it is to make this applesauce pie, I was all in! I mean, seriously, an applesauce pie?? How can this not be good?
You literally just stir everything together, pour it into your pie shell, and bake!!! Perfect, right??
Also, the flavor is so light and fresh, you really need to taste it for yourself to believe it. That bit of lemon juice is a game changer!!
So thank you AGAIN, Miss Lori.
I'll be making this pie again and again. This just might be a new Thanksgiving favorite!!!
 

1 unbaked deep dish 9” pie shell
2/3 cup sugar
4 eggs
1 cup butter, melted
2 cups applesauce
1/4 cup lemon juice
1 tsp vanilla extract
2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup flour

In a large bowl, stir all ingredients together until well combined. Pour into pie shell.
Bake at 350ºF for 45 minutes or until set.


Tips:
This recipe is doubled from the recipe that Miss Lori posted. I wanted to fill up my deep dish pyrex pie plate. Worked perfectly! But if you're using just a regular 9" pie dish, you'll want to cut all the ingredient amounts by half.

Sweet Potato Cake Squares

 

Usually, when Autumn rolls around, I immediately jump into “pumpkin everything” mode. But this time, I thought, how about sweet potatoes instead? They’re pretty much interchangeable in baking, so I figured Why Not? Then I found a pumpkin cake recipe, gave it a few tweaks, and this is where I landed. It turned out perfectly! The flavors are very similar, but just the tiniest bit lighter, I think. And it came together in a snap.
 I made them for some of my dearest friends, and everyone absolutely loved them. I know your friends will love ‘em too! Enjoy!




For the Cake:
2 cups flour
2 tsp baking powder
1 tsp salt
2 tsp pumpkin pie spice blend
1 tsp cinnamon
4 eggs
1 3/4 cups sugar
1 cup vegetable oil
2 cups cooked sweet potatoes 


For the Icing
6 oz soft cream cheese
5 tbs soft butter
2 cups powdered sugar
1 tsp vanilla extract


Heat oven to 350ºF.
 In a medium bowl, sift flour, baking powder, salt, and spices. Set aside.
 In a mixing bowl, beat eggs and sugar.
Mix oil and mashed sweet potatoes into liquid mixture and beat until well mixed. Add sifted dry ingredients. Mix until just combined. 
Pour into a greased and floured 9x13 baking pan.
 Bake for 30 - 40 minutes or until cake tests done. 



Icing:
Beat cream cheese and butter. 
Slowly beat in powdered sugar and vanilla extract until completely smooth. 
Spread over cooled cake and cut into squares.


Tips:
The two biggest things to remember: don’t over mix, and don’t over bake. Other than that, it’s all pretty straight forward!
Don’t have sweet potatoes? Use pumpkin or butternut squash instead!
