2 1/4 cups flour
1 tsp baking soda
1 1/2 tsp salt
1 cup butter, (2 sticks)
3/4 cup sugar
3/4 cup brown sugar
1 tsp pure vanilla extract
2 large eggs
3 cups mix-ins (any kind of chips, chopped chocolate or nuts)
Preheat the oven to 350ºF.
Spray a 9 x 13 pan with nonstick cooking spray, then line it with parchment paper with an overhang for easy removal.
In a small bowl, stir together the flour, baking soda, and salt.
In a large mixing bowl, use a hand or stand mixer to beat the butter, brown and white sugars, and vanilla extract until creamy. Add the eggs one at a time, mixing well between each one. Gradually add the flour and mix until combined. The dough will be very thick. Add the mix-ins. Set aside some chocolate chips or chocolate chunks for the top. Mix in the chocolate chips and nuts on low speed until combined.
Press or spread the dough evenly into the prepared pan. Sprinkle reserved chocolate chips over top of the dough.
Bake for 20-25 minutes or until the top is golden brown and the edges are set.
Cool the bars in the pan on a wire rack.

Reese's Chewy Chocolate Cookies with Peanut Butter Chips
3/4 cup Hershey’s cocoa
1 tsp baking soda
1/2 tsp salt
1 1⁄4 cups (2-1⁄2 sticks) butter, softened
2 cups sugar
2 eggs
2 tsps vanilla extract
1 (10 oz pkg.) Reese’s Peanut Butter Chips
Heat oven to 350°F.
Stir together flour, cocoa, baking soda, and salt. Set aside.
Beat butter and sugar in a large bowl with mixer until fluffy.
Add eggs and vanilla; beat well. Gradually add flour mixture, beating well.
Stir in peanut butter chips.
Drop by rounded teaspoons onto ungreased cookie sheet.
Bake 8 to 9 minutes. (Do NOT over bake; cookies will be soft.
They will puff while baking and flatten while cooling).
Cool slightly; remove from cookie sheet to wire rack. Cool completely.
Tips:
-When creaming the butter and sugar, be sure to let it go for a good 3-5 minutes. I find that it takes longer than you think to really incorporate those two ingredients. You’ll wind up with a much better product!
-Anytime I make a peanut butter dessert, I always like to add an extra little pinch of salt. Just that tiny bit of extra saltiness really brings out the peanutty flavor. And as my Kristin always says.. “ The peanut butterier the better!”

Red Velvet Brownies with Cream Cheese Frosting
Are you in the mood for something chocolate? Well, here’s a recipe that ticks all the boxes for what you want in a brownie recipe, and will surely satiate all of your chocolate cravings! Now, usually I would save my best chocolate recipes until Valentine’s Day (especially RED ones!), but this one just seemed so festive, I thought it would be perfect for Christmas.
Full disclosure, I’m not even sure whose recipe this is. I made them ages ago, and am just now getting around to posting the recipe. Usually I’d make a note of where I happened to find it, but for some reason that didn’t happen this time. Oh well! I guess I was in a rush. What can you do? So if this recipe is yours, please let me know!
In the meantime, they’re the perfect "picky-puppy” dessert for your holiday party, and I just love how pretty they are. Easy too! I promise your family and friends will love them! Enjoy!
For the brownies:
1 cup unsalted butter
3/4 cup semi-sweet chocolate chips
2 cups white sugar
1-2 tbs red food coloring
1 tsp vanilla extract
4 large eggs
1 3/4 cups all-purpose flour
1 tbs white vinegar
For the frosting
1/2 cup unsalted butter softened
8 oz cream cheese
1 tsp vanilla extract
1/4 teaspoon salt
3 cups powdered sugar
Preheat the oven to 350ºF.
Lightly grease a 9x13 inch pan.
Add the butter and chocolate chips to a large heat-proof bowl. Microwave on medium power for 1 minute. Remove from the microwave and stir. Repeat the process until they're melted together. Whisk in the sugar, vanilla extract, & red food coloring. Allow the mixture to cool for a few minutes, then whisk in the eggs. Only whisk until just combined. Gently fold in the flour with a rubber spatula or wooden spoon. Stir in the vinegar. Pour/spoon the batter into the prepared pan. Bake for 25-30 minutes or until the top looks set and an inserted toothpick comes out clean or with a few damp crumbs. Be careful not to over bake or brownies can get dry. Cool completely.
In a large bowl, beat the butter until fluffy (about 2 minutes). Mix in the cream cheese until just combined. Then add in the vanilla extract & salt. With the mixer on low speed, beat in the powdered sugar about 1 cup at a time until the desired sweetness & thickness is reached. Frost the cooled brownies with a flat knife, and optionally decorate with sprinkles.
Tips:
-Feel free to decorate them however you like! I love how the cream cheese frosting makes it look they’re covered with a blanket of snow. Be creative!
-As always, whenever I make a 9x13 pan of any kind of dessert squares, I like to line the pan with parchment paper before baking. Just give the pan a light spray, then place a large sheet of parchment in the pan, with a few inches extra hanging over the sides. Then fill and bake as directed. When the pan is completely cooled (or chilled), use the extra “hanging over” bit of the parchment as handles to lift the entire batch out of the pan in one go. Now you can use a large sharp knife to make perfectly clean cuts, and you won’t ruin your pan!

One-Bowl Chocolate Chip Bread
OK, this one is so quick and easy, you won't even believe it.
I was browsing some recipes to use up a bag of chocolate chips, and I found this one on Taste of Home. I knew at once that I needed to test this one for my sister, Cathy, because (as I immediately texted her), this one has her hubby, Gregg's, name written all over it. Seriously, though, that's the absolute truth. You could bake ANY kind of cake or bread, and he'll say "it's great, but it would be better if it had chocolate chips in it." Not even kidding.
Anyway... whenever I read recipes on different websites, I'm always sure to read the comments below. More times than not, it aggravates the hell out of me when someone says all the changes they made to the recipe, and then only give it one star because they didn't like the way it turned out. Are you kidding?? I want to say "Just make it as directed and maybe it'll turn out!"
So, with this recipe, I noticed a lot of the comments said that it needed to be split into two loaves, or that it was too dense, or that it had too many chocolate chips for one loaf (as if that's possible). Honestly, I have no idea what recipe they're talking about, because mine turned out perfectly. It was the perfect amount of batter for one loaf, it was just the right amount of chips, and in baked in exactly the time was supposed to. And, true to its name, I only used one bowl! Sounds pretty perfect to me!
So if you're looking for a not-too-sweet bread to have with your coffee or your cup of tea, you should try this one. I'm pretty sure if you just follow the recipe, it'll turn out perfectly for you too!

3 large eggs, room temperature
1 cup sugar
2 cups sour cream
3 cups self-rising flour*
2 cups semi-sweet chocolate chips
Heat oven to 350°F.
Beat eggs, sugar, and sour cream until well blended. Gradually stir in flour. Fold in chocolate chips. Transfer to a greased 9x5" loaf pan. Bake until a toothpick comes out clean, 65-75 minutes. Cool in pan 5 minutes before removing to a wire rack to cool.
*As a substitute for 3 cups of self-rising flour:
Place 4-1/2 teaspoons baking powder and 1-1/2 teaspoons salt in a 1-cup measuring cup. Add all-purpose flour to measure 1 cup; combine with an additional 2 cups all-purpose flour.
Tips:
OK, usually this is where I would tell you everything I would do differently, but like I said, I wouldn't change a thing. It took literally only 5 minutes to prep and get into the oven, it baked perfectly (right at the 65 minute mark for me), and it was exactly perfect in one loaf pan. The only thing I can think of that I would do differently is maybe to try adding different mix-ins. Cinnamon chips? Peanut Butter Chips? Butterscotch chips? I bet they'd all be pretty fabulous!

Chocolate Cherry Cobbler
Usually, when you think of a cobbler, you think of apples or peaches, correct? Or maybe even blackberries, and yes definitely cherries. But most times, we think of a simple biscuit topping. Well, at least I always do. But what if we took that biscuit topping and made it a CHOCOLATE biscuit instead? Now we’ve bumped up the decadence factor a few notches! Of course chocolate and cherry are a wildly famous couple, and it comes together in no time at all. They’re even better when you serve them warm with a scoop of vanilla ice cream. Btw, speaking of couples, if you’d like to make this for your special someone, this has romance written all over it! Enjoy!
1 1/2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/4 cup butter
1 cup chocolate chips
1 egg
1/4 cup milk
1 (21 oz) purchased cherry pie filling or your own
Heat oven to 350ºF.
Coat a 2 quart casserole dish with vegetable cooking spray. Melt chocolate chips in a measuring cup in the microwave, stirring every 20 seconds until smooth. Let stand for 5 minutes to cool slightly.
In a medium bowl, stir together the flour, sugar, baking powder, and salt. Cut in butter until the dough is a uniform crumbly texture. Beat the egg into the melted chocolate chips, then stir the milk in. Pour the chocolate mixture into the dry ingredients, and stir until well blended.
Pour the cherry pie filling in an even layer in the bottom of the greased casserole dish. Drop spoonfuls of the chocolate batter over the cherries in a random pattern.
Bake for 40 to 45 minutes, until top crust is not doughy when lifted.
Serve warm.
Tips:
Be careful of scorching the chocolate chips in the microwave. Just take your time and stir at 20 second intervals as directed. Another way to do it would be to place your chocolate chips in a heat proof bowl, then place the bowl over a small pot of simmering water. Let the steam from the water gently melt the chips, then stir until smooth.
Not a fan of cherries? Use another kind of pie filling! How about strawberry?!

Cinnamon Swirl Chocolate Chip Pumpkin Butter Bread
Here we have another recipe from Half Baked Harvest via my niece, Casey. I figured since the chocolate chip pumpkin butter cookies were such a hit, why not do the same thing with a bread? (or is it cake? You decide!)
What’s not to love? Pumpkin with warm spices and chocolate chips… it’s the perfect thing to cap off this year’s “pumpkin season.” Serve it for dessert, or toast a slice of it in your toaster oven and have it with coffee. Serious yum!
1/2 cup pumpkin butter*
1/2 cup pumpkin puree
1/2 cup melted salted butter
1/2 cup pure maple syrup
2 large eggs, at room temperature
2 tsp pure vanilla extract
1 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp baking powder
1/2 tsp plus 1 tbs ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
1/2 tsp kosher salt
1/2 cup semi-sweet chocolate chips
1/2 cup granulated sugar
Preheat the oven to 350° F. Grease a (9x5 inch) bread pan.
In a large mixing bowl, stir together the pumpkin butter, pumpkin puree, melted butter, maple syrup, eggs, and vanilla until combined. Add the flour, baking powder, baking soda, 1/2 teaspoon cinnamon, nutmeg, ginger, cloves, and salt, mix until just combined. Fold in the chocolate chips.
In a bowl, combine the granulated sugar with the remaining 1 tablespoon of cinnamon.
Spoon half the pumpkin batter into the prepared pan. Sprinkle with the cinnamon sugar, reserving 2 tablespoons of sugar for topping the loaf. Add the remaining batter over the sugar. Run a knife down the center of the loaf 1-2 times to gently swirl the sugar. Sprinkle the remaining cinnamon sugar over top of the batter.
Transfer to the oven and bake for 55-65 minutes, or until the center is just set. I usually cover the bread with foil at the 30 minute mark to prevent the top from burning.
Remove the bread and let cool for at least 30 minutes before cutting...or just eat it warm with a smear of butter (you should do this!). Enjoy!
*Recipe note from the author:
Pumpkin butter substitute: you can use 1/2 cup additional pumpkin puree plus 2-4 tablespoons all purpose flour. Start with 2 tablespoons flour, then add 1-2 tablespoons more of the dough feels a little too wet. Don't add more than 1/4 cup additional flour.
Joey’s tips:
-Buying spices can be pretty expensive, especially if you’re only buying them to try this recipe. Instead of buying all four, you can just use a pumpkin pie spice blend. It won’t be EXACTLY the same result, but it’ll be pretty darn close!
-Since you’re only using 1/2 cup, what will you do with the rest of the can of pumpkin? Simple! Make two loaves and freeze one!

Chocolate Chip Pie
Usually, when you think of pie recipes for Thanksgiving, the first thing that comes to mind is a pumpkin pie, correct? And if not pumpkin, then maybe sweet potato, or apple, or some kind of fruit mincemeat with lots of warm Fall spices like cinnamon and ginger and cloves and allspice, am I right? But here's a question for you, what about CHOCOLATE? I know we always think of chocolate for other holidays like Valentine's Day or Halloween, but I think chocolate deserves a place at our holiday dessert table just as much as anything else. There. I said it.
Actually, it’s become a running joke with my brother in law, Gregg. Every time my sister, Cathy, makes a dessert, Gregg always says “it would be better if it had chocolate chips in it.” Well, Gregg, this one’s for you! It's from Nestle, so if you love the classic Nestle Toll House cookie recipe, you'll love this one too.
It’s rich and chocolatey through and through, and it’s enough to satisfy the biggest chocolate cravings. It's super easy too! And yes, it’s special enough for your holiday dessert!
So, as you plan your menus, keep your chocolate lovers happy and add this one to your holiday table. The chocoholics in your life with thank you for it!
2 large eggs
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup butter, softened
1 cup NESTLE® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 cup chopped nuts (optional)
Sweetened whipped cream or ice cream
Preheat oven to 325ºF.
Beat eggs in large mixer bowl on high speed until foamy. Beat in flour, granulated sugar, and brown sugar. Beat in butter. Stir in morsels and nuts. Spoon into pie shell. Bake for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack. Serve warm with whipped cream, if desired.
Tips:
Before the pie is finished baking, I added a few extra chocolate chips on top, just to make the pie look a bit more like a chocolate chip cookie. Of course, this is completely optional, but doesn’t it look better that way? Who's with me?
Also, I should note that the original recipe specifically said to use a deep dish pie plate. But I didn’t think it looked like enough filling, so I only used a regular 9” pie plate. It filled it perfectly!

Chocolate Stout Cupcakes
Whenever I try a recipe using Guinness Stout, I always wind up with the same problem: what to do with the rest of the Guinness. Yes, it seems obvious to just drink it, right? But the thing is, I don't drink beer or stout, like, at all. But since I do like to cook and bake with it, I have a habit of buying a 6-pack, using ONE for a recipe, and then I'm stuck with the other five. So, I could certainly tell you that the inspiration for baking these cupcakes comes from a deep love of Guinness, but really I just wanted to use it up! lol
But even though I don't drink it, I LOVE what it brings to the party when it comes to cooking and baking. These cupcakes are so rich and chocolatey, they're a sure-fire win. In fact, if you have some serious chocoholics in your circle, THIS is what you should make for them. I think they're possibly the richest most chocolatey cupcakes I've ever made. Not. Even. Kidding. And they come together in a snap, so you can whip up a batch in no time!
The other thing that I like about this recipe is that there's Guinness in the frosting too, not just in the cupcakes. Very often, you'll see a chocolate Guinness cake with maybe a cream cheese or Bailey's frosting, but this one has a decadent chocolate Guinness swirl on top that pushes it over the top. It's from a website called Broma Bakery. I'm not sure if it's their recipe or not, but like I always say, they're the ones who shared it, so they're the ones who get the credit. So, if you want a rich, ever so moist cupcake that will blow your chocolate lovin' mind, this is the one for you!
Btw, does anyone want a bottle of Guinness? I still have 3 left.....
For the cupcakes:
1/2 cup dutch-processed cocoa powder
1 cup all-purpose flour
1 1/4 cups sugar
3/4 teaspoon baking powder
1 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted and cooled
2 large eggs
1/2 cup plus 2 tablespoons dark stout, such as Guinness Extra Stout
1 teaspoon vanilla extract
For the frosting:
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3/4 cup cocoa powder
3 cups powdered sugar
1/4 cup Guinness Extra Stout
2 tablespoons milk
1 1/2 teaspoons vanilla extract
flaked sea salt, for garnishing (optional)
Preheat oven to 350°F. Line 14 cupcake tins with dark cupcake molds. Set aside.
In a standing mixer fitted with the paddle attachment, mix the cocoa powder, flour, sugar, baking powder, and salt on low speed until combined. In a separate bowl, whisk the butter, eggs, Guinness, and vanilla extract. Add the wet ingredients to the dry in batches, beating on medium speed until the batter is smooth and shiny, about 20 seconds. Pour into cupcake molds, filling about 3/4 of the mold, and bake for 20-25 minutes. Remove from oven and allow to cool completely on a wire rack.
While the cupcakes are cooling, make the frosting. Cream the butter and cocoa powder for 2-3 minutes, until the cocoa powder begins to lighten in color. Add in the powdered sugar, milk, Guinness, and vanilla extract and beat until light and fluffy, about 1 minute.
Frost the cupcakes by scooping the frosting into a piping bag with a large star tip. Swirl the frosting around the cupcake, starting from the middle and working your way outwards. Continue to spiral the frosting up like a pyramid until the cupcake is frosted. Sprinkle with flaked sea salt, if using, and serve!
Tips:
Yes, I know most cupcake tins are only 12 cupcakes and not 14. An odd yield, to be sure. But it's worth the extra time to bake just those last two cupcakes. To make sure they bake evenly, fill up the rest of the cupcake wells with water. This helps to insure even baking when you only have a partially filled cupcake tin.
Oh, and don't forget the sea salt on top! That's the kicker!

Mini Chocolate Cherry Cheesecakes
Many many years ago, my sisters used to make Cherry Cheese Tarts. They were just simple little cheesecakes that didn't take many ingredients and were a cinch to throw together. It was one of those desserts that showed up at many family events and they were always a bit hit. A vanilla wafer went into the bottom of a cupcake liner, cheesecake batter was poured over the top, and then after they baked and cooled, they were topped with a spoonful of cherry pie filling. Perfect, right? They were SO good! But I thought, well, what if we do a chocolate version? Chocolate and cherry are a match made in heaven! (And frankly, why have I never done this until now?) I'll just do an Oreo cookie crust, a chocolate cheesecake filling, and my same favorite cherry pie filling on top! Awesome.
I was originally just going to chocolate-ify the recipe that we used to use, but then I thought maybe it would be better to go with a whole new recipe. Since I didn't already have a go-to chocolate cheesecake recipe, I decided to try this recipe from a blog called Baker by Nature. It's a FABULOUS recipe. Not too sweet, VERY rich and chocolatey, and perfect if you want a small but decadent treat. And they look so delicious that you'll get the added bonus of everyone saying "ooooo and aaaaahhhhh" when you bring them to a party. LOL Btw, They're also the perfect thing to make if you want to impress somebody special. I'm not sayin', I'm just sayin'!
For the crust:
36 Oreo cookies, crushed into fine crumbs
4 tbs melted butter
Preheat oven to 325ºF. Line two 12-mold muffin tins with paper liners. Spray liners lightly with non-stick spray and set aside until needed. Place the cookies in the body of a small food processor and pulse until the cookies are very fine crumbs. Add melted butter and pulse until well combined. Divide the mixture between the cupcake liners and press it firmly into the bottom of each mold. Bake crusts in preheated oven for 5 minutes. Remove from the oven and place the tins on a wire rack to cool while you make the filling. Reduce oven to 300°F.
For the cheesecake:
7 ounces semi-sweet chocolate, finely chopped
16 ounces full-fat cream cheese
2/3 cup sour cream
2/3 cup granulated sugar
1/2 tbs unsweetened cocoa powder
2 large eggs plus 2 egg yolks
1/2 cup heavy cream
1 tsp pure vanilla extract
Place the chocolate in a heat proof bowl over a small pot of simmering water. Heat until the chocolate is completely melted, stirring occasionally with a rubber spatula. Remove the pot from the heat, leaving the bowl of chocolate over the hot water. Set aside.
In the bowl of a food processor, pulse the cream cheese and sour cream until completely smooth, scraping down the sides of the bowl as needed. Add in the sugar and cocoa powder and beat until smooth. Add in the eggs, egg yolks, and heavy cream and mix until combined,. Fold in the chocolate. Finally add in the vanilla and pulse for another 20 seconds. Divide the filling evenly among the cupcake liners. Bake cheesecakes for 15 minutes, then turn off the oven and leave the door closed for another 5 minutes. Remove the cheesecake pans from the oven and place the pans on a wire rack to cool completely. Once cool to the touch, place the pans in the fridge to chill for at least 2 hours. Once the cheesecakes are completely cool, you can remove them from the pan.
Top with cherry pie filling or your topping of choice.
Tips:
Whenever making any kind of cheesecake, be sure that all of your ingredients are room temperature. It makes all the difference in the final product!
This recipe originally called for a ganache topping, which is just chocolate melted with heavy cream. I decided to stick with cherry pie filling, since that was the original inspiration. Strawberry pie filling would be great too, or even just a swirl of whipped cream and a fresh raspberry on top. You do you!
If you don't need to make 24, you can either cut the entire recipe in half and just make 12, OR you can still make all 24 and then freeze the rest for another time!

Chocolate Cake with Cream Cheese Filling and Chocolate Cream Cheese Frosting
Since I love to bake for my family and friends, it's not uncommon for me to occasionally receive a text from someone with a dessert idea. It's usually a picture of something FABULOUS along with a text that says some version of "you should make this!" (I know, I know..... what they're really saying is "you should make this FOR ME" LOL) I recently received such a text from my #1 Nephew, Dan, aka Daniel Boone.. His text didn't say "you should make this" but just left a link and a subtle message that his birthday is rapidly approaching hahaha. Daniel Boone, you know I will always make you a cake anytime, even when it isn't your birthday!
So, I took a look at the recipe. TBH, it was almost exactly the same as Hershey's Black Magic Cake, which is always a favorite, but I wanted to try and share something new! So I figured, well, lets use the same idea of 3 layers of cake with 2 different kinds of cream cheese butter cream, and we'll try a different recipe for the cake itself. I happened to find THIS recipe on a website called Browneyed Baker (which I love), and it's called the Best Chocolate Cake. I have to say, it's right up there with some of the best chocolate cake recipes I've ever made! Usually the Black Magic Cake is my usual standard against which all other chocolate cakes are compared, but seriously, this recipe gives the BMC a run for its money. It uses coffee, which is a classic move to give it a deep rich chocolatey depth of flavor, and it also uses oil, which makes the most rich and moist cake you could ever want. That works for me! I gave the cake a test run for a few of my friends who were all too happy to be my taste testers. Thumbs up all around!
So if you want to bake something for a birthday, or maybe for your sweetheart, give this one a try. You don't have to do all the fillings and butter creams, but if you do, it's perfectly decadent and over the top for your next special occasion!
For the cake:
2 1/2 cups + 1 tbs all purpose flour

1 cup + 1 tbs cocoa powder
1 tbs baking soda
1 1/2 tsp baking powder
1 1/2 tsp salt

1 1/2 cups buttermilk
1 1/2 cups strong black coffee
3/4 cup vegetable oil
4 1/2 tsp pure vanilla extract
For the Cream Cheese Filling:
8 oz cream cheese
6 tbs softened butter
1/2 tablespoon vanilla extract
2-3 cups powdered sugar
For the Chocolate Cream Cheese Butter Cream:
3/4 cup butter
12 oz cream cheese
1 3/4 cups Hersheys cocoa powder
5 cups powdered sugar
1/2 cup + 3 tablespoons whole Milk
2 tsp pure vanilla extract
Make the Cake:
Preheat oven to 350 degrees F.
Generously spray three 8-inch round cake pans with baking spray. (Be sure it's the kind that has added flour). Otherwise just grease and flour your pans. Set aside.
In the bowl of an electric mixer, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. In a medium bowl, whisk together the eggs, buttermilk, coffee, oil, and vanilla. Add the wet ingredients to the dry ingredients and mix for 2 minutes on medium speed. Scrape the sides and bottom of the bowl and mix for an additional 20 seconds (the batter will be very thin). Divide the batter evenly among prepared pans. Bake for 20 minutes and rotate the pans in the oven. Continue to bake until a toothpick inserted into the center of one of the cakes comes out almost clean (with a few moist crumbs), about 12 more minutes. Cool the cakes (in the pans) on wire racks for 20 minutes, then carefully turn them out onto cooling racks to cool completely. While the cake is baking, make the butter creams.
Cream cheese filling:
Whip the cream cheese and the butter with an electric mixer on high speed for about 30 seconds. Once combined begin adding in 1/2 cup of powdered sugar at time, making sure each half cup is fully incorporated before mixing in another 1/2 cup. Add in the vanilla extract & whip one last time for about 30 more seconds on high and beat one minute more until nice & fluffy. Set aside.
Chocolate Cream Cheese Frosting:
In another large bowl, beat the butter and cream cheese with an electric mixer and begin adding in the powdered sugar 1/2 cup at a time again. Add in the cocoa and the milk and vanilla. Whip all of the ingredients until they are thoroughly incorporated. Beat at high speed for about one minute or until fluffy.
Now assemble the cake:
Place the bottom layer on a cake plate. Spread 1/2 of the cream cheese buttercream filling over the bottom cake layer. Top with the second cake layer and repeat the process. Lastly, top with the third layer. Finally, frost the top layer gently with the chocolate cream cheese butter cream & all over the sides of the cake.
Tips:
Ok, I know it looks like A LOT of steps, but it's really pretty straight forward. Just follow the recipe!
If you'd like MORE of the cream cheese filling (instead of just the two filling layers), double the amounts of the cream cheese filling recipe, and then frost all three layers, making sure to smooth the top layer. Chill it for about an hour, and then cover the whole cake with the chocolate frosting.
To make buttermilk, add a tbs of vinegar or lemon juice to 1 cup of whole milk. Microwave it for 30 seconds. The milk will curdle, which is exactly what you want. Works perfectly!

Chocolate Chip Raspberry Bars
Ok, full disclosure, this dessert was originally gonna be chocolate chip CHERRY squares, not raspberry. But when I got to the store, the cherries didn't look so impressive. The raspberries, however, looked fabulous! So that's what I used. Usually, whenever I share a recipe, I'll say which ways you can tweak it. Well, this time I've already done that!! When I was looking for cherry recipes, I found this one on a blog called Averie Cooks, and it said you can substitute most any kind of fruit. Any kind of berries, peaches, or any combination you like. Immediately I loved that this was a recipe in which you can use FRESH fruit. That's not always the case because of the moisture content. But this one works with any fruit you like! That was the biggest selling point for me. So, yes, I called them chocolate chip raspberry bars, but just know that the original used fresh pitted cherries. Oh, and I doubled everything because I was having a few friends over for dinner, and wanted a bigger batch.
Anyway, the important thing is they're amazing! Gooey and delicious, just as you'd want a blondie to be. And they're super easy too! I'm lookng forward to trying different fruit combos and other mix ins.
So, thanx, Averie, for yet another fabulous recipe! I think this recipe is now my go-to base recipe for whatever flavor mood I happen to be in!
1 cup unsalted butter, melted
2 cup light brown sugar, packed
2 large egg
4 teaspoons vanilla extract
2 cup all-purpose flour
1/2 teaspoon salt, optional
2 cups semi-sweet mini chocolate chips
1-2 cups fresh raspberries
Preheat oven to 350F.
Spray a 9x13 pan with cooking spray, line with parchment leaving some hanging over the edges, then spray again with cooking spray; set aside.
In a medium microwave-safe bowl, melt the butter, about 60 seconds. To the melted butter, add the brown sugar and stir to combine. Add the egg, vanilla, and stir to combine. Add the flour, salt, and stir until just combined, taking care not to over mix or the blondies will be tough. Fold in chocolate chips, fruit (I don’t halve the cherries: I like them chunky and big), and pour batter into prepared pan, smoothing it lightly with a spatula or offset knife if necessary. Bake for 27 to 32 minutes, or until edges begin to slightly pull away from sides of pan and center is set. Allow bars to cool for at least 1 hour before slicing and serving.
Tips:
After baking and cooling, use the parchment paper as a sling to lift the whole batch out of the pan in one go. Then use a large knife to cut into squares. This will save you pan from being ruined!
I used mini chocolate chips, but use whatever kind you like!

Salted Caramel Chocolate Cookies
Ok, I know I've said this before, but I have to say it again. I've never met a salted caramel ANYTHING that I didn't like. There's just simply nothing better than the combination of salty and sweet that you get from the simple addition of salt to a rich creamy gooey caramel. So when I was looking for chocolate desserts and happened to find this one on a blog called Gimme Some Oven, I knew I had to try it. (Full disclosure, I love that name and I wish I had thought of it! haha)
These cookies taste as rich and delicious as a gooey caramel brownie. And that little pinch of salt over the top just sets everything off in the most perfect way. Enjoy them with a tall glass of ice-cold milk, and you'll be living your best life. I'm not even kidding. Bake up a batch or two, and I PROMISE you'll be a hit!
1 cup (2 sticks) butter
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder (or dark chocolate cocoa powder)
3/4 teaspoon baking soda
1/2 teaspoon salt
1 (11 oz.) bag Kraft caramel bits
1 cup semi-sweet or dark chocolate chips
coarse sea salt
Preheat oven to 350ºF.
In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the caramel bits and chocolate chips. Drop by rounded tablespoonfuls onto greased cookie sheets. Press each cookie down slightly to flatten, then sprinkle with a pinch of sea salt.
Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
Tips:
Very often when baking cookies or a cake, the first step is to beat the butter and sugar together. I always make sure to let it go for much longer than you'd think, just so that it really comes together to make a creamy texture. It's been my experience that letting it go for at least 5 minutes is a complete game changer in all of my baking!
Instead of greasing the cookie sheet, I just lined it with a sheet of parchment paper. It's seriously a cookie baker's best friend. And you don't have to use a new piece every time you go into the oven. You can reuse a sheet many times!
Oh, one other thing...I didn't press mine down to flatten before baking as the recipe directs. TBH, every time I bake cookies they wind up being a little on the flat side, so I was happy that these came out perfectly just by dropping them with a cookie scooper.

Hershey's Scrumptious Chocolate Layer Bars
Whenever you want a rich and delicious chocolate dessert, you will absolutely never go wrong with a Hershey recipe. I have several Hershey's cookbooks, and I'm not even kidding when I tell you that every single recipe I've ever made from them has been fabulous. They're well tested, straight forward, and they never disappoint. So, since I wanted to try a new chocolate something, of course I turned to my Hershey's Chocolate Treasures cookbook, and here we are!
At first, I wasn't thinking of doing any kind of bars or squares because I already have so many brownie recipes (not that there's anything wrong with having new brownie recipes, but I was looking for something different.) Then I saw this recipe, and knew this was the one! I love that the top and bottom layers are not chocolate, so it looks like pretty stripes when you cut into it. I also love that it has almond extract in it, since I recently discovered that my niece, Terri, is a big fan of almond flavoring. The technique was also easy, tried and true. You make one dough, which serves as both the top and bottom layers, and then add a fabulous filling. In this case, the filling is cream cheese and melted chocolate chips. Are you kidding? Seriously? They had me at cream cheese!
So if you're looking to try a new chocolate something, try this one! It hits every single note and it will absolutely satisfy every single chocolate craving!
12 ounces pkg. Hershey's semisweet chocolate chips or mini chips
1 package (8 ounce size) cream cheese
1 can (5.3 ounce size) evaporated milk

Slow Cooker Chocolate Strawberry Cobbler

2 cans strawberry pie filling
1 chocolate fudge cake mix
1 stick butter
vanilla ice cream
Ok here we go. This is about as easy as it gets. Dump the pie filling into the bottom of your slow cooker in one even layer. Now pour the dry cake mix over the pie filling. Slice the stick of butter into small pats, and place them all over the top of the cake mix. Place the cover on your slow cooker and cook it on high for about 2 1/2 to 3 hours. That's all there is to it!
Serve with scoops of vanilla ice cream.
Tips:
Of course you can do any kind of pie filling or any kind of cake mix you like. Mix and match different flavors! The technique remains the same!

Mint Chocolate Cookie Crunch Brownies
Ok, lemme just say this right from the start, I'm am not the biggest fan of MINT. There. I said it. I mean, yeah, it's ok, but just not as the MAIN flavor of something. Otherwise, all I can think of is Altoids or toothpaste. The one mint thing I DO happen to love, however, is Girl Scouts' Thin Mint Cookies. I guess it's because the mint isn't so overpowering, and they are the perfect blend of chocolate and mint flavor. So I thought, well, lets put them into a brownie! Not an original thought, I know, but still a good one, and worth further research. Yes, yes, I know I could just buy a brownie mix, throw in some chopped cookies, and call it a day, but I usually don't like to use a boxed mix. That would take all the fun out of it!
So I started looking for Thin Mint Brownie recipes. I found a TON of them, but many of them go VERY far with the whole mint thing. Adding mint extract to chocolate ganache, adding Andes Candies to buttercream, and on and on. Altoids, again. Sorry. Is it so much to ask for just the right brownie recipe with a thin mint crunch? I actually started to think, well, maybe what I really do want is a boxed mix and some chopped cookies.
But then I found this fabulous recipe from a website called The Daily Meal, and it's exactly what I wanted. A scratch brownie with the thin mint crunch. Simple, easy, not complicated, and no Altoids. Could I still just do a boxed brownie mix and stir in some cookies? Of course, but I'll always go from scratch if I can help it!!
Brush a 13- by 9-inch pan with butter. Melt the chocolate and butter in a large bowl over a double boiler. Transfer the melted chocolate to a mixing bowl. Stir in the sugar. Add the eggs, one at a time being careful to incorporate each egg. Stir in the vanilla extract. Add the flour and salt at once. Stir to combine. Fold in half of the chopped cookies. Spread the brownie batter evenly in the pan, and top with the remaining chopped cookies. Bake for 30 to 35 minutes. Remove from the oven, and cool completely before slicing and serving.
Btw, I didn't even measure 2 cups of cookies. I just used an entire box!

Cake Mix Blondies
Many people ask me if I ever use cake mix when I'm baking. Well, the answer is yes and no. Yes, I use cake mixes all the time, but no I never use them to just bake a cake. I always use them like an ingredient in another recipe. If I'm using it as a cake, it'll be with other cake ingredients that don't follow the directions on the box.
So I happened to have a yellow cake mix and decided to do something with it. I found a recipe for blondies on a blog called Like Mother Like Daughter and decided to try it, since I already had all of the ingredients. I did tweak it slightly and it turned out great! It was quick and easy and it was just exactly what I wanted. Perfect for a birthday party or just because you're feeling something sweet and fun and festive!!
1 box yellow cake mix
1 large egg
1/4 cup oil
1/3 cup milk
1 tsp pure vanilla extract

French Silk Pie
Have you ever heard of a French Silk Pie? It's something I've heard about for ages, but never really looked into until fairly recently. It's basically just a chocolate mousse pie, and it's very rich and creamy, much more so than just chocolate pudding in a pie crust! I recently made one for the first time and thought "why have I waited all this time???" It's really one of the most rich and decadent chocolate somethings I've made in quite a long time. And it's a bit more sophisticated than chocolate pudding. Absolutely delish!
Now, I have to say, there are a couple things worth noting. From what I've read, a TRUE French Silk Pie has eggs in it, but the pie itself is not cooked. I know, I know, everyone always says you shouldn't eat raw eggs, right? Well, honestly, I kind of don't worry about that. I've seen Anne Burrell taste her raw scrambled eggs to make sure they're seasoned enough, and I've also heard Sara Moulton say that she doesn't really worry about it either. But if that worries you, all you have to do is use pasteurized eggs. Problem solved!
And the next thing about this pie is the texture. It's SO rich and creamy and sets up into the perfect slice of pie! The tricky thing is all about the sugar. You should use really superfine sugar for this pie, because the sugar needs to dissolve as you whip the filling. Regular granulated sugar may not dissolve completely, and your pie might not be completely silky smooth.
And finally, I know I always choose recipes that don't take a lot of time, but this one takes a little extra. I mean, it's still super easy to do.. (easy as pie, quite frankly!) but the extra time is completely worth it! Have I ever lied to you before???? And besides, you can use the extra whipping time to multitask! I used it to empty/reload the dishwasher, but you do you!
Anyway, if chocolate is your thing, you simply MUST try this recipe. I found it on a blog called Averiecooks.com, and it's definitely a keeper!
Ingredients:
20 Oreo cookies, finely crushed (I use chocolate-filled Oreos rather than white-filled, and regular rather than Double-Stuffed)
3 tablespoons unsalted butter, melted
Filling:
6 ounces dark chocolate, at least 72%, melted (unsweetened baker’s chocolate may be substituted)
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups ultrafine sugar, also called ultrafine or baker’s sugar
1 teaspoon vanilla extract
1/2 teaspoon instant espresso granules
pinch salt
4 large eggs, at room temperature (or pasteurized eggs, if you prefer)
Topping:
8 ounces whipped topping (thawed and stirred well, lite okay) or 2 cups freshly whipped cream
3 to 4 ounces dark chocolate (72% or higher) roughly chopped, for sprinkling
Method:
Crust –
Preheat oven to 350F and spray a 9-inch pie dish wish cooking spray; set aside. Add Oreos to the canister of a food processor and process until finely ground, 1 to 2 minutes on high power; set aside. In a small microwave-safe bowl, melt the butter, about 1 minute on high power. Add melted butter to canister of food processor and process until incorporated, about 30 seconds. Turn crumbs out into prepared pie dish and using your fingers, hard-pack the mixture to create a crust, making sure to cover sides of pie dish. Bake for 10 minutes, or until just set. Place on a wire rack to cool.
Filling –
In a medium microwave-safe bowl, melt the chocolate, about 1 to 2 minutes on high power. Stop after 1 minute to check and stir. Heat in 15 second increments until chocolate can be stirred smooth; set aside to cool.
To the bowl of a stand mixer fitted with the paddle attachment, add the butter, sugar, and beat on high power until very light and fluffy, about 5 minutes, stopping as necessary to scrape down the sides of the bowl. Mixture should be very pale, almost white; the lighter and fluffier the better to ensure sugar is well on it’s way to being dissolved and incorporated fully. Add the vanilla, espresso granules, salt, cooled chocolate, and beat on high power until incorporated and mixture is fluffy, about 3 to 4 minutes. Stop, scrape down the sides of the bowl, remove paddle attachment, switch to whisk attachment, add 1 egg, and beat for 5 minutes on high power. Stop, scrape down the sides of the bowl, add the second egg, beat for 5 minutes on high power. Repeat process with remaining eggs. Eggs are added 1 at a time, spaced 5 minutes apart, for a total of 20 minutes active whipping time. After 20 minutes, make sure your mixture is smooth, silky, fluffy, with zero traces of graininess. Continue beating until you’re satisfied with the smoothness because this is what your pie will taste like. Turn mixture out into crust, smoothing the top lightly with a spatula. Cover with plastic wrap and place in fridge for at least 4 hours (overnight is better) for pie to set up fully.
Topping –
Add the whipped topping/cream, smoothing it lightly with a spatula. I left a bare margin of 1-inch for visual appeal so you can see the chocolate; cover surface fully if preferred. Sprinkle evenly with chopped chocolate before slicing and serving. Pie will keep covered in the fridge for up to 5 days.
Tips:
I think the next time I make this (which will be VERY SOON), I'll probably try it with just a regular pie crust. Since we're going to all this trouble to make sure it's smooth and silky, I was kind of thinking that a crumb crust was working against me. Just a thought!
Also, I know the recipe says to let it chill for at least four hours or overnight, but mine set up beautifully after just three. Just sayin'! Also, I opted for a few sprinkled milk chocolate chips instead of chopped chocolate. It's just easier!

Chocolate Cake with Whipped Peanut Butter Frosting
Ok, I know I already have several chocolate cake recipes, but can you really have too many?? I think not! So here we go.
I recently made this for a dinner at the request of my niece, Terri. Actually, when she first showed me this recipe (that she found on a blog called Ready Set Eat) she said "you can use whatever cake recipe you want. I really just want the whipped peanut butter frosting." Ha! Normally, my go to chocolate cake recipe is Hershey's Black Magic Cake, but I compared the two, and they're very similar, so I figured I'd go with it.
And guess what?!? It's just as good! It's rich and moist and very deep with chocolate flavor. I think the secret is the cup of coffee. It makes any chocolate cake SO much more rich! (It doesn't actually make the cake taste like coffee, it just makes it taste like a deeper chocolate!) Clever, huh?
For this cake, I did most of the decorating myself, but then I got an assist from Terri's youngest, Grace. I must say I'm kinda sorta proud of the drip design. It can be a little tricky to get just right! And yes, yes, I know it's piled with A LOT of candy, but when you have a 4 year old helping you, you just keep going. I think it makes it all the more fun and everyone loved it!
Definitely make this the next time you want a showstopper for a special occasion, or you can just make it because your niece wanted an excuse to have whipped peanut butter frosting.
Cake:
Baking Spray
1 cup hot coffee
3/4 cup unsweetened cocoa powder
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 tsp salt
1 cup whole milk
2 eggs
2 tsp vanilla extract
1-1/2 cups unsalted butter, softened, divided
2 cups granulated sugar
Frosting:
1 cup creamy peanut butter
4 tbs heavy cream
2 1/2 cups confectioners' sugar
Ganache:
1/4 cup milk chocolate morsels
2 tbs heavy cream
Reese's cups, Hershey's Kisses, and/or Reese's Pieces for decorating, if desired
Preheat oven to 350°F.
Spray two 9-inch round cake pans with baking spray. Stir together coffee and cocoa powder in medium bowl; set aside to cool. Stir together flour, baking powder, baking soda and salt in another medium bowl; set aside. Whisk milk, eggs and vanilla into cooled cocoa mixture until well blended.
Beat 1/2 cup butter and sugar with an electric mixer on medium high speed until light and fluffy, about 3 minutes. Reduce mixer speed to low and gradually beat in the egg mixture until well blended, scraping down the sides of the bowl as needed. Gradually beat in flour mixture until just combined. Divide batter evenly between cake pans. Bake 30 to 35 minutes, until toothpick inserted in center comes out clean. Cool on wire racks.
Meanwhile, place remaining 1 cup butter, peanut butter and 4 tablespoons heavy cream in large bowl. Beat with an electric mixer on medium-high speed until light and very fluffy, at least 5 minutes. Reduce mixer speed to medium and beat in powdered sugar 1/2 cup at a time until well blended.
Invert one cake layer out onto serving plate and press lightly to secure it in place. Spread about 1 cup of frosting evenly on top of first layer. Invert second layer onto frosting, make sure the layers line up evenly and then lightly press down to secure top layer in place. Frost entire cake with a light layer of frosting; refrigerate 15 minutes.
Meanwhile, microwave 2 tablespoons heavy cream in small microwave safe bowl 30 seconds, until hot. Stir in chocolate chips until melted. Frost cake with a thick layer of frosting. Drizzle with chocolate sauce and decorate with peanut butter cups or other candy.
Tips:
The key to making the perfect drip design is to make sure the cake is very cold. You should also make sure the ganache is not too hot, but still warm enough to pour. Then when you drizzle it around the perimeter of the cake, the cold cake will chill the ganache and stop it in its tracks, and that's what keeps it from dripping all the way down.
