Tollhouse Cookie Bars



   Here’s a good one to keep in your recipe arsenal. It’s just a simple cookie bar, but it hits all the right notes, and everyone goes crazy for them every time I make them. They’re a great picky-uppy kind of sweet treat and the recipe comes from a blog called Midwestern Homelife. Of course, I tweaked it ever so slightly because I can never leave well enough alone. 
 They just hit the spot whenever you feel like having a little something sweet, and you literally don’t even need an occasion to make them! On the other hand, they’re the perfect thing to make for your special somebody… or as a boost for your nephew who has a crazy 48 hour work shift coming up….   or as a huge thank you to your ANGEL of a next door neighbor who, without asking, cleared your walkways with his snowblower… TWICE. Come to think of it, I think I need to make another batch, just for myself, because why not??? I think you need to make some too!!

 
 

2 1/4 cups flour
1 tsp baking soda
1 1/2 tsp salt
1 cup butter, (2 sticks)
3/4 cup sugar
3/4 cup brown sugar
1 tsp pure vanilla extract
2 large eggs
3 cups mix-ins (any kind of chips, chopped chocolate or nuts)



Preheat the oven to 350ºF. 
Spray a 9 x 13 pan with nonstick cooking spray, then line it with parchment paper with an overhang for easy removal. 
In a small bowl, stir together the flour, baking soda, and salt.
In a large mixing bowl, use a hand or stand mixer to beat the butter, brown and white sugars, and vanilla extract until creamy. Add the eggs one at a time, mixing well between each one. Gradually add the flour and mix until combined. The dough will be very thick. Add the mix-ins. Set aside some chocolate chips or chocolate chunks for the top. Mix in the chocolate chips and nuts on low speed until combined. 
Press or spread the dough evenly into the prepared pan. Sprinkle reserved chocolate chips over top of the dough. 
Bake for 20-25 minutes or until the top is golden brown and the edges are set.  
Cool the bars in the pan on a wire rack. 


Tips:
It may seem like overkill to spray the pan and then line it with parchment, but I still like to do both. Just that little quick spray helps the parchment paper stay in place for when you're pressing the cookie dough into the pan. Otherwise, the paper slides all over the place. 
The original recipe only called for 1 tsp salt, but I added the extra half tsp because I think it needed it. I also only ever use salted butter, but you do you. 
The mix-ins I used were chocolate chips, butterscotch chips, and white chocolate chips, with mini chocolate chips over the top.  I think I might do peanut butter chips next time. Chopped pecans, walnuts, and/or macadamia nuts would also be awesome. Use anything you like!

Peanut Butter and Jelly Krispie Treats

 

  We all know and love the classic Rice Krispie Treats. Always good, always a hit. But what if we add a little spin to them? NOW we're elevating them to a new level of delicious! 
 I recently hosted a party for some of my dearest and most cherished friends, and I was trying to think of dessert ideas. I kind of like the idea of doing an adult dinner menu, but then choosing something whimsical for dessert. I thought of doing ice cream sundaes. Or S'mores. But then I thought oooo how 'bout rice krispie treats?! But lets have some fun and do them in an elevated way. So in this case, I kept the childhood whimsy and made them with peanut butter and jelly, but instead of doing store bought grape jelly or strawberry jam, I made my own bumbleberry jam. (that's a mixture of strawberry, blueberry, blackberry and raspberry). I also wanted the treats to be nice and chewy, so I added the secret ingredient... sweetened condensed milk. It makes them absolutely pull-apart chewy and it's the perfect thing to keep them from becoming hard and stale. That was all it needed! One bite and it was childhood nostalgia all over the place. Everyone loved it! Who knew? And come to think of it, why haven't I done this before??
 So if you love a good PB&J, give this one try. There's a reason a classic is a classic. Classic flavors, classic treats. And putting them together is the fun twist! Enjoy! 
 
 
 Non stick cooking spray
 1/2 cup butter
1 (10oz) bag mini marshmallows
1/3 cup sweetened condensed milk
1/2 cup creamy peanut butter
1 tbs vanilla extract
1 tsp kosher salt
6 cups rice cereal
1 cup jam or jelly, any flavor, home made or store bought


Spray a 9x13 pan with nonstick cooking spray. Line with a long piece of parchment paper that extends up and over two opposite sides of the pan.
In a large pot set over medium heat, melt the butter. Add the marshmallows and stir with a flexible spatula until melted and smooth, about 5 minutes. Stir in the sweetened condensed milk, peanut butter, vanilla, and salt until combined.
Remove the pan from the heat and fold in the rice cereal until combined. Transfer the mixture to the prepared pan and press down lightly to create an even layer. Use an offset spatula to spread the jelly over the treats. Let the treats set up on the counter for at least 1 hour. To remove them from the pan, grip the parchment overhang and lift. Slice into squares and serve.
 
 
Tips:
The original recipe (which is actually from The Today Show, btw) directed you to press half of the mixture into an 8x8 square pan, spread with jelly, then press the other half on top, to make a literal PB&J sandwich. I think that makes too thick of a bite and decided to do the 9x13 pan instead, with the jelly on top. But if you'd like to do the sandwich, go for it! You'll only need about 1/2 cup of the jelly. 
Like I said, the key to making chewy treats is the sweetened condensed milk. And there's also one other key ingredient, which is, believe it or not.. SALT!  Don't omit it! It really makes the peanut butter taste like peanut butter. And if you really want to pump up the peanut flavor, add some chopped peanuts! Because why not???

Marshmallow Frosted Pistachio Bars




 I recently hosted a little get together with a few of my family and friends to watch the movie, Wicked. 
Now, unless you live in a cave, you likely already know that Wicked is about the witches from The Wizard of Oz, which clearly means that my menu had to be green and pink. I mean, obviously. 
 For my pink "Glinda the Good" dessert, I made little strawberry cheese cake mousse cups, which were pretty fabulous, I must say. And for my green "Elphaba, the Wicked Witch of the West" dessert, I made these cute little pistachio squares. And guess what!?! They were were an immediate hit! 
 Crispy chewy pistachio cookie bars covered with fluffy pillowy marshmallow frosting. What's not to love? And upon tasting them, my sister said "I'm gonna need this recipe." So here it is! 
They're SO simple! You just mix and bake, nothing crazy. Just a quick and easy recipe, and you probably already have most of the ingredients in your pantry anyway. Perfect, right? 
 So, if you haven't seen Wicked, you absolutely should. It's literally perfect. And even if you're not having a wickedly swankified Ozmopolitan party, you should still make these cookie bars. I know you'll love 'em!
They're WONDERFUL!



For the Bars:
1 cup salted butter, softened
1/2 cup granulated sugar
2 large eggs
2 tsp pure vanilla extract
2 (3oz)boxes instant pistachio pudding mix
1/2 tsp baking soda
2 cups flour
1/4 tsp salt 
1 cup white chocolate chips
1/4 cup chopped pistachios


Preheat oven to 375°F and prepare a 9 x 13" baking dish with baking spray or parchment paper .
Cream together butter and sugar for 2 to 3 minutes on high speed until fluffy. 
Add in eggs and vanilla and mix well.
Add pudding mix, baking soda, flour, and salt. Mix on low speed until combined. 
Add in white chocolate chips and gently stir into the dough.
Spread evenly into bottom of prepared baking dish and bake for 15 to 17 minutes. 
They will be soft in the middle and slightly crispy around the edges, just like a cookie. 


For the Marshmallow Frosting:
1 cup butter, room temperature
14 oz Marshmallow Fluff
2 cup powdered sugar
2 tsp vanilla extract

Beat butter and powdered sugar until fluffy and well mixed.
Gently mix in fluff and vanilla extract until mixed well.

 
When the bars are completely cooled, spread with frosting. 
Top with chopped pistachios, if desired. 
Cut into bars. 


Tips:
Be careful not to over bake the bars, otherwise they'll turn out hard and crumbly, rather than soft and chewy. 
If your frosting is a little too runny, add a bit more powdered sugar. Frosting can be made in advance and kept in an airtight container in the fridge for several days. 
You can easily cut this recipe in half, and bake in an 8x8 square baking pan. The bake time remains the same!

Very Strawberry Brownies

               

  Here's a quick and easy dessert recipe to make for your Valentine. Very cute, very pink, and yes, VERY strawberry! Now, I know you're probably thinking "if they're not chocolate, why are they still called brownies?" Well, it's the brownie TEXTURE we're going for here. They start out with a regular cake mix, but then when you pour the glaze over the still warm pan, it kind of sinks in a little bit, giving them a more brownie like texture. 
  So here's the thing.. when I was first looking at this recipe, there's were no extracts or dried strawberries, and I worried that it might wind up tasting like that artificial strawberry flavor (you know, like strawberry quik?) So I decided to amp it up a little. I saw another version of it that included the strawberry extract... but the aha moment was when I added the strawberry powder to it. BOOM. Huge strawberry flavor!! I thought "Why am I not adding this to every strawberry thing ever?" Definitely a game changer. 
 I made them for a group of friends at a recent party I hosted. One of my friends said they're VERY STRAWBERRY so that became the name! 
 Make them for your Valentine to show them how much you love them and they'll love you right back!
 
 
 
Brownies
1 box strawberry cake mix
2 large eggs
1/3 cup salted butter, melted
1 tsp strawberry extract (optional, but recommended)
1 tbs freeze dried strawberry powder (optional, but recommended)

Glaze
3/4 cup powdered sugar
2 tbs strawberry preserves
1 tbs lemon juice
1 tbs cream


Heat oven to 350F.
Line a 9x9 baking pan with parchment paper, leaving about 2 inches hanging over the edge. Set aside.
In a mixing bowl, combine all brownie ingredients. Batter will be very thick. Press evenly into prepared pan. Bake about 20 minuted or until an inserted tooth pick comes out clean.
Let it cool slightly, but leave them in the pan.
Mix all glaze ingredients until smooth. Pour over warm brownies.
Cool or chill completely.
Using the parchment overhang like a sling, lift the entire batch out of the pan before cutting into 9 large squares or 16 small ones.
Garnish with a strawberry on top of each one as shown, if desired.


Tips:
The extract and freeze dried strawberries are optional, but seriously they made all the difference for the recipe. Thats what makes them VERY strawberry! In fact, I don't think I'd ever make this recipe without them. You can easily find them on Amazon.
Also, you can double the whole thing and bake in a 9x13 pan. 
Btw. I saw a tiktok video with this recipe and she called them "pinkies", but I just couldn't bring myself to do it.

Caramel Pumpkin Oatmeal Squares

  
 Here's an easy dessert that is perfect for all your little ghouls and goblins. Firstly, it's what I call a "picky uppy" dessert, which means you can just grab it and go. And secondly, the recipe uses one of my favorite techniques: one dough is used for the bottom crust as well as the topping! That just makes things so much easier. And they're delicious! Sort of like a cross between a pumpkin square and an oatmeal cookie. It comes together pretty easily too. 
Definitely keep this recipe readily available the next time you're feeling like a picky uppy pumpkin treat!

 
2 c. flour
2 c. old fashioned oats
1 1/2 c firmly packed light brown sugar
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
3/4 tsp ground ginger
1/4 tsp nutmeg
1 cup (2 stick) butter, melted
1 cup canned pumpkin
1 tsp vanilla extract
7 oz (1/2 of 14-ounce package) caramels, unwrapped
2 tbs milk 
 
 
Preheat oven to 350°F. 
Mix flour, oats, sugar, baking soda, salt and spices in large bowl. Add butter; stir until mixture is well blended and forms coarse crumbs. Reserve 1/2 (about 2 1/4 cups) for the topping. Add pumpkin and vanilla to remaining mixture in bowl; stir until well blended. Press evenly into bottom of greased foil-lined 13x9-inch baking pan. Set aside.
Microwave caramels and milk in medium microwavable bowl on HIGH 2 to 3 minutes or until caramels are completely melted, stirring after every minute. Let stand 1 minute. Pour over pumpkin mixture in pan, spreading to within 1/2-inch of edges. Sprinkle with reserved crumb mixture.
Bake 30 to 35 minutes or until light golden brown. Cool in pan on wire rack. Lift from pan. Cut into bars.


Tips:
This recipe is from McCormick. Ya know, the spice people. And I'm sure they're very excited to have you use cinnamon, ginger, and nutmeg. But I like to just use a tbs of pumpkin pie spice blend. It's just easier. Usually I make my own, which also includes allspice, but you can also buy it already blended. And I always add more than the recipe says. But you do you!

Blueberry Cream Cheese Bars

 


  Whenever my family has an occasion to celebrate, my first question is always "what can I bring?" What can I say..... that's just how I was raised. My Dad used to always say "when you go to a party, you ring the doorbell with your elbow." (meaning your hands are full, carrying whatever you brought to the party). Most times it'll be an easy dessert, or something "picky uppy", which is a highly official term we use to describe party finger food. Sweet or savory, it's always the perfect thing for a party. So when my nephew Gregger and his newly intended, Britny, announced their forthcoming nuptials, I immediately started looking for a picky uppy something to bring to their engagement party. 
  Sometimes, I'll have something specific in mind, which often requires a trip to the store, but in this case, I eyed the fresh blueberries that I already had in my fridge, and that's the direction I went. A few more ingredients from my well stocked pantry, a google search, and this is where I landed. 
 It's my own adaptation of a recipe I found on a blog called Dance Around the Kitchen. Simple. Easy. And best of all, I already had all the ingredients. Perfect!
 So lets talk about the recipe for a minute. I've seen this method before. You make one recipe for the crust, then use half of it for the bottom layer, add a middle filling layer, and then use the rest of the crust crumbled over the top. Great. But here's the thing... it always seems to me that there isn't enough crust dough to go around. I like to make a solid bottom crust, and enough crumble to almost cover the top. So my adaptation was just to bump up the amounts a little to make more crumble crust/topping. I suppose I should have done some math to increase the proportions equally, but I didn't. I just sort of added more to each measure. I guess it's very forgiving because it turned out perfectly. And it had the perfect amount of crust!
   So, congratulations, Gregger and Britny! I'm so thrilled for both of you! And I'm glad the blueberry bars were a hit at your engagement party!
 And the next time you need to "ring the doorbell with your elbow', try this recipe. 
You'll love 'em!


1 cup butter softened
1 cup sugar
1 cup brown sugar
3/4 tsp baking soda
1 tsp salt
2 cups flour
2 cups quick oats (uncooked)
8 oz cream cheese (room temp)
1 14oz can sweetened condensed milk
1 tsp vanilla extract
1 egg yolk
1 cup fresh or frozen blueberries (or raspberries)
Sprinkle of cinnamon, optional



Preheat oven to 350ºF
Prepare a 9x13 pan by lining with parchment paper or coating with cooking spray.
 In a large bowl, mix the butter, sugar, and brown sugar. Stir in the baking soda, salt, flour, and oatmeal until combined. Press half of the mixture into the bottom of the pan and bake for 13 minutes.
While the bottom layer is baking, make the filling.
Place the cream cheese in a large bowl and stir until smooth. Slowly add the sweetened condensed milk with a whisk to make sure it's mixed well. Then add the vanilla and egg yolk. 
Once the bottom layer is done baking, (no need to cool), pour the cream cheese mixture over it and carefully spread it out. Add the berries on top of the cream cheese layer. Sprinkle the remaining oatmeal crumble on top and press it down lightly. Sprinkle the top with cinnamon, if desired. 
Bake for an additional 20-25 minutes or until the edges are golden brown. 
Let cool completely, then chill for at least an hour before cutting; store in the refrigerator.


Tips:
When stirring the cream cheese, be sure to get all the lumps out before adding the condensed milk. It'll be harder to get the lumps out if you add them all at once! Don't ask me how I know...
If you're not a fan of blueberries, try something else! Cherries would be great. Pineapple would be amazing. Diced strawberries would be awesome. Or combine whichever fruits you like. Diced peaches and raspberries would be fabulous. You do you!
Btw, I added cinnamon, but you don't have to. It just seemed to me that the crumble is very similar to an oatmeal cookie, so why not? Turned out to be a good decision!

Red Velvet Brownies with Cream Cheese Frosting

 


  Are you in the mood for something chocolate? Well, here’s a recipe that ticks all the boxes for what you want in a brownie recipe, and will surely satiate all of your chocolate cravings! Now, usually I would save my best chocolate recipes until Valentine’s Day (especially RED ones!), but this one just seemed so festive, I thought it would be perfect for Christmas.
Full disclosure, I’m not even sure whose recipe this is. I made them ages ago, and am just now getting around to posting the recipe. Usually I’d make a note of where I happened to find it, but for some reason that didn’t happen this time. Oh well! I guess I was in a rush. What can you do? So if this recipe is yours, please let me know!
 In the meantime, they’re the perfect "picky-puppy” dessert for your holiday party, and I just love how pretty they are. Easy too! I promise your family and friends will love them! Enjoy!


For the brownies:
1 cup unsalted butter
3/4 cup semi-sweet chocolate chips
2 cups white sugar
1-2 tbs red food coloring
1 tsp vanilla extract
4 large eggs
1 3/4 cups all-purpose flour
1 tbs white vinegar


For the frosting
1/2 cup unsalted butter softened
8 oz cream cheese
1 tsp vanilla extract
1/4 teaspoon salt
3 cups powdered sugar



Preheat the oven to 350ºF.
Lightly grease a 9x13 inch pan.
 Add the butter and chocolate chips to a large heat-proof bowl. Microwave on medium power for 1 minute. Remove from the microwave and stir. Repeat the process until they're melted together. Whisk in the sugar, vanilla extract, & red food coloring. Allow the mixture to cool for a few minutes, then whisk in the eggs. Only whisk until just combined. Gently fold in the flour with a rubber spatula or wooden spoon. Stir in the vinegar. Pour/spoon the batter into the prepared pan. Bake for 25-30 minutes or until the top looks set and an inserted toothpick comes out clean or with a few damp crumbs. Be careful not to over bake or brownies can get dry. Cool completely.


In a large bowl, beat the butter until fluffy (about 2 minutes). Mix in the cream cheese until just combined. Then add in the vanilla extract & salt. With the mixer on low speed, beat in the powdered sugar about 1 cup at a time until the desired sweetness & thickness is reached. Frost the cooled brownies with a flat knife, and optionally decorate with sprinkles.


Tips:
-Feel free to decorate them however you like! I love how the cream cheese frosting makes it look they’re covered with a blanket of snow. Be creative!
-As always, whenever I make a 9x13 pan of any kind of dessert squares, I like to line the pan with parchment paper before baking. Just give the pan a light spray, then place a large sheet of parchment in the pan, with a few inches extra hanging over the sides. Then fill and bake as directed. When the pan is completely cooled (or chilled), use the extra “hanging over” bit of the parchment as handles to lift the entire batch out of the pan in one go. Now you can use a large sharp knife to make perfectly clean cuts, and you won’t ruin your pan!

Lunchroom Lady Peanut Butter Bars



 Very often, when people have some extra time on their hands, they like to watch TV or a movie. I, on the other hand, like to watch videos on Youtube. Actually, I often refer to it as "going down the Youtube rabbit hole" because sometimes I'll get so involved in watching videos that the next thing I know it's 3 hours later. Ah, well. I guess there are worse things I could do.
 One of my favorite Youtube discoveries was a channel called Whippoorwill Holler, hosted by Miss Lori and her husband Mr. Brown. (And yes, that's what she calls him, which I love. ) They share all kinds of simple homemade old fashioned recipes. Lots of canning and preserving, lots of pies and baking. How awesome is that? Clearly, Miss Lori and I are kindred spirits. I've tried several of her recipes and I've loved every single one of them.
 So when I saw that she was making these peanut butter bars, I immediately added peanut butter to my next grocery list. They're easy to make and they turned out perfectly. Very gooey, very peanutty, and just exactly what you want in a peanut butter bar. YUM.
 I immediately called my Kristin, because her motto is "the peanut butterier the better." This one definitely lives up to that!

Bars:
1 cup (2 sticks) melted butter 
1 1/2 cups peanut butter 
1 1/2 c sugar 
1/2 cup brown sugar 
1 1/2 tsp salt 
1 tbs pure vanilla extract
4 eggs 
2 cups flour 

Glaze:
1/4 c. peanut butter 
2 to 3 tbs. milk 
1 tsp. vanilla
1 cup confectioners sugar



For the bars:
Heat oven to 350ºF. Grease a 9x13 pan. Line with parchment, if desired. 
Melt butter and peanut butter together, either on the stove top or in the microwave. Stir together until well combined. Set aside. 
In large mixing bowl, stir together the sugars, salt, and vanilla extract. Stir in eggs one at a time. Add flour and stir until well incorporated. Add melted peanut butter mixture until well combined.  Pour into prepared pan. Bake 30-35 minutes or until set in the center and lightly golden around the edges. 
Meanwhile, make the glaze.

For the glaze:
In a small bowl, microwave the peanut butter and about 2 tbs of the milk, just to soften. Stir until smooth. Add vanilla and confectioners sugar. Whisk until well incorporated and smooth. If it's too thick, add the last tbs of milk. Spread the glaze over the bars while they're still warm in the pan. Cool completely or chill before cutting into squares. 



Tips:
I like to spray my pan, and then line it with parchment with enough extra to hang over the edges. Then you can use the parchment as a sling to lift the whole batch out of the pan in one go.
I added a little extra confectioners sugar to the glaze, just because I wanted it a little sweeter, and I also added a little pinch of salt. Speaking of salt, that's what will definitely make your bars taste peanutty. Just that little bit of saltiness changes the entire game. Be sure to include it!

Cherry Pie Bars




  I was recently invited to visit some of my family members who were vacationing at the Jersey Shore. Of course, my first question was "what can I bring?" They said they wanted "a picky uppy dessert", which is a very technical term we like to use and it basically means something such as a brownie, something cut into squares that is easily picked up and eaten out of hand (instead of needing plates, bowls, spoons, etc.)
 Well, I knew right away I didn't want to do anything chocolate since the heat was so relentless. I didn't want to arrive at the shore with a melted mess. So I decided to make these little cherry gems.
 I actually found the same exact recipe on several websites, which usually means that's the go-to recipe, but on every website, the recipe always used a 15x10 sheet pan, and I only have 18x13 sheets. hmm... that won't work. Then I thought, well, usually whenever I make a picky uppy dessert, I use a 9x13 pan... yes, I think sounds like the better option than a sheet pan. So I needed to find a smaller version of the same recipe, or figure out different quantities for all of the ingredients. (Wait, did all of that make sense??) Resizing pans... makes my brain hurt.. anyway... The listed recipe is basically the same as all the rest, and the amounts have been adjusted to work for the smaller 9x13 pan. I think that's usually the pan most people use anyway, so there we go.
 The recipe is SUPER easy to do, and it came together in a snap. Everyone LOVED them, and they were gone in no time at all. Side note, they still wound up becoming a little melty (melty?) because of the 80 mile drive to the shore, but no one seemed to mind the extra gooey-ness!
I know I'll definitely be making them again. You should too!




1 cup butter, softened
1 3/4 cups sugar
4 eggs
1 tsp vanilla
2 1/2 cups flour
1 1/2 tsp baking powder
pinch salt
1 (21oz) can cherry pie filling




Heat oven to 350ºF.
Spray a 9x13 inch baking pan with nonstick spray, line with parchment paper with an inch or two hanging over the edge, and then spray again. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Combine the flour, baking powder and salt; stir into the creamed mixture. Reserve 1 1/2 cups of the dough and spread the rest into the bottom of the prepared pan. Cover this layer evenly with cherry pie filling. Drop the rest of the dough by spoonfuls on top of the cherry layer and spread to cover the best you can.
Bake for 35 to 40 minutes, until top is slightly golden. Drizzle with a confectioners' glaze when cool for sweeter bars. Let cool completely or chill before cutting into bars.


Tips:
For the glaze, I just added water to about a cup of powdered sugar, just a few drops at a time, until it was the right drizzling consistency. (Can use milk or even fruit juice instead of water). I also added a 1/4 tsp of almond extract. Be careful when adding water to the sugar, a little goes a long way, so just add a tiny bit at a time and whisk it together. Same goes for the almond extract. A little goes a long way.

Chocolate Chip Raspberry Bars



  Ok, full disclosure, this dessert was originally gonna be chocolate chip CHERRY squares, not raspberry. But when I got to the store, the cherries didn't look so impressive. The raspberries, however, looked fabulous! So that's what I used. Usually, whenever I share a recipe, I'll say which ways you can tweak it. Well, this time I've already done that!! When I was looking for cherry recipes, I found this one on a blog called Averie Cooks, and it said you can substitute most any kind of fruit. Any kind of berries, peaches, or any combination you like. Immediately I loved that this was a recipe in which you can use FRESH fruit. That's not always the case because of the moisture content. But this one works with any fruit you like! That was the biggest selling point for me. So, yes, I called them chocolate chip raspberry bars, but just know that the original used fresh pitted cherries. Oh, and I doubled everything because I was having a few friends over for dinner, and wanted a bigger batch.
 Anyway, the important thing is they're amazing! Gooey and delicious, just as you'd want a blondie to be. And they're super easy too! I'm lookng forward to trying different fruit combos and other mix ins.
  So, thanx, Averie, for yet another fabulous recipe! I think this recipe is now my go-to base recipe for whatever flavor mood I happen to be in!


1 cup unsalted butter, melted
2 cup light brown sugar, packed
2 large egg
4 teaspoons vanilla extract
2 cup all-purpose flour
1/2 teaspoon salt, optional
2 cups semi-sweet mini chocolate chips
1-2 cups fresh raspberries


Preheat oven to 350F.
Spray a 9x13 pan with cooking spray, line with parchment leaving some hanging over the edges, then spray again with cooking spray; set aside.
In a medium microwave-safe bowl, melt the butter, about 60 seconds. To the melted butter, add the brown sugar and stir to combine. Add the egg, vanilla, and stir to combine. Add the flour, salt, and stir until just combined, taking care not to over mix or the blondies will be tough. Fold in chocolate chips, fruit (I don’t halve the cherries: I like them chunky and big), and pour batter into prepared pan, smoothing it lightly with a spatula or offset knife if necessary. Bake for 27 to 32 minutes, or until edges begin to slightly pull away from sides of pan and center is set. Allow bars to cool for at least 1 hour before slicing and serving.


Tips:
After baking and cooling, use the parchment paper as a sling to lift the whole batch out of the pan in one go. Then use a large knife to cut into squares. This will save you pan from being ruined!
I used mini chocolate chips, but use whatever kind you like!

Brown Butter Apple Blondies



  Every so often, I'll receive a text from someone with a link to a recipe. Usually it will contain a message that says something along the lines of "this needs to happen" or "when are we making this?"  That's exactly how this recipe came to me, from my sister, Cathy. She sent me the link with a text that simply said "Yum." Clearly, that says it all! Browned butter, apples, brown sugar, and cinnamon?? What's not to love?  It has "This needs to happen" written all over it. Apple desserts are my absolute favorite, so I knew I needed to try it, especially since the recipe is from Sally's Baking Addition. (Seriously, if you've never checked out her blog, stop what you're doing right now and go check it out!!) This is a great party dessert because it's always good to have a sweet picky uppy something for your guests. Halloween? Thanksgiving? Christmas? They go with any holiday! Of course, they're also perfect for just any day when your kids want a little after school snack. SO good!

Apples:
2 cups peeled chopped apples (about 2 medium apples) 
2 tbs pure maple syrup (or brown sugar) 
1/8 tsp ground cinnamon

Blondies:
1 cup (2 sticks) unsalted butter, cut into pieces* 
2 1/3 cups all-purpose flour 
1 1/2 tsp baking powder 
1/2 tsp salt 
1 tsp ground cinnamon 
1/4 tsp ground nutmeg 
1 2/3 cups packed light or dark brown sugar 
2 large eggs, at room temperature 
1 1/2 tsp pure vanilla extract

Brown Butter Icing:
1/4 cup unsalted butter 
1 1/2 cups confectioners’ sugar 
2 tbs milk 
1/4 tsp pure vanilla extract



  1. Important before you begin! I recommend browning the butter for the blondies and icing first. You can brown the butter for both the blondies AND the icing together. Once it’s all browned, set 4 Tablespoons (2 liquid ounces) aside for the icing in step 8. The rest (8 liquid ounces) is for the blondie batter, used in step 6.
  2. Brown the butter: Slice the butter into pieces and place in a light-colored skillet. (Light colored helps you determine when the butter begins browning.) Melt the butter over medium heat, stirring constantly. Once melted, the butter will begin to foam. Keep stirring. After 5-8 minutes, the butter will begin browning and you’ll notice lightly browned specks begin to form at the bottom of the pan. You will smell a nutty aroma. See photo and video above for a visual. Once browned, immediately remove from heat, pour into a heat-proof bowl, and set aside until ready to use.
  3. Prepare the apples: Meanwhile, return the pan to the stove. (No need to rinse out!) Add the apples, maple syrup/brown sugar, and cinnamon. Stir and cook over medium heat until apples have slightly softened, about 3-5 minutes. Set apples aside.
  4. Preheat oven to 350°F (177°C). Line the bottom and sides of a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides to lift the finished blondies out (makes cutting easier!). Set aside.
  5. Make the blondies: Whisk the flour, baking powder, salt, cinnamon, and nutmeg together in a large bowl.
  6. In a medium bowl, whisk 1 cup browned butter, brown sugar, eggs, and vanilla extract together. Pour the wet ingredients into the dry ingredients and stir until combined. Fold in the apples. Batter will be thick.
  7. Evenly spread batter into prepared pan. Bake for about 35 minutes or until the top is lightly browned and a toothpick comes out *mostly* clean. Remove from the oven and allow the blondies to cool completely in the pan set on a wire rack.
  8. Brown butter icing: Heat the remaining 1/4 cup (4 Tablespoons) of brown butter in the microwave for a few seconds since it has likely solidified by now. Whisk in confectioners’ sugar, milk, and vanilla extract. If needed, add more confectioners’ sugar to thicken or more milk to thin out. Drizzle over cooled blondies, then cut into squares.

Tips:
Normally, I would tweak a recipe to suit my own taste, but this one is already perfect. In fact, I even left the directions exactly as Sally has written them, because there was no reason to change them!

Cheesy Dapper Apple Squares



  Do you like the combination of salty and sweet? I love love LOVE it, so it's always exciting when I find a new recipe with that particular dynamic. Usually my go-to is anything with salted caramel, but then I found this recipe. It uses a classic paring, apples and cheddar cheese, which is a marriage made in salty sweet culinary heaven! I once read an article that said "apple pie without cheese is like a kiss without a squeeze!" I guess I can't argue with that, huh?
 Now, if you've never heard of serving sharp cheese with apples, think of a fancy schmancy party where they serve different kinds of wine with a plate of different fruits and cheeses. It's the same thing! They just GO together. I've heard of melting slices of cheddar cheese over a warm apple pie, I've also heard of cheese being baked right into the pie crust, but I've never seen it baked into a layered apple square such as this. It's fabulous! I found this exact recipe on several websites and no one seems to vary it very much, so I immediately knew that it would be pretty perfect as is. I think I read somewhere that it's a Pillsbury Bake Off winning recipe, but I have no idea exactly who came up with it in the first place. I saw another comment that said she has been making this recipe for over twenty years, so it just goes to show you that you just can't beat something that stands the test of time.
 Give this recipe a go for your next Fall get together. Halloween Party? Thanksgiving? Or just any random day you're feeling a little salty and sweet. It's definitely a new favorite!!!




1-1/2 cups flour
1-1/2 cups graham cracker crumbs
1 cup firmly packed brown sugar
1/2 teaspoon baking soda
3/4 cup (1-1/2 sticks) butter, softened
6 oz extra sharp Cheddar cheese, thinly sliced
2-1/2 cups baking apples, cored, peeled, and sliced
3/4 cup granulated sugar
1/2 cup chopped nuts or slivered almonds



Preheat the oven to 350ºF.
In a large bowl, mix together the flour, graham cracker crumbs, brown sugar, baking soda, and butter. Set aside 1-1/2 cups of the crumb mixture and pat the rest into a 9x13-inch baking dish. Place the cheese slices on top of the crumb mixture.
In a medium-size bowl, combine the apples and granulated sugar. Layer over the cheese. Add the nuts to the reserved crumb mixture and sprinkle over the apples. Bake for 35 to 40 minutes, or until golden brown. Cool completely, or chill,  then cut into 2-inch squares.




Tips:
Extra sharp cheese is definitely the way to go here. You really don't want a mild Cheddar because it needs to stand up against the sweet. 
The only variation I saw on all of the sites I read was the addition of a little cinnamon in the crust. I contemplated adding spices, but decided against it because I didn't want it to compete with the sharpness of the cheese. I'm sure it will work whichever way you decide to go.
Instead of doing slices of cheese, I finely shredded mine. It just seemed to me that I could have more even coverage with the shreds. Tbh, I wanted MORE cheese, so I think I'll add a little extra next time.
And since I was using sweet Honeycrisp apples instead of a tart Granny Smith, I added a little spritz of lemon juice when I tossed the apple slices with the sugar, just to brighten the flavor a bit.  I left out the chopped nuts because I didn't hand any on hand, but you do you!
Oh, one other thing.. I've seen this recipe on some sites that say to grease the pan, others say ungreased. Anytime I'm making dessert squares, I always line the pan with parchment paper because it not only makes it easy to lift the whole batch out of the pan in one piece, but it also gives a little extra nonstick insurance, which is always a good thing.

Almond Bars


 Ok, so before we talk about this week's recipe, let me give you a little bit of a back story.
For years and years, I've had a tradition with my niece, Terri, on the night before Thanksgiving. At first, it started out as "Uncle Joey, will you please help me make stuffing for my in-laws?" It has now turned into "how about you make the stuffing, and I'll have a glass of wine?" Either way, we always get together, and it's always a fun night.
 So, last year, we were discussing our cooking agenda for the night, and at the last minute, Terri decided that she wanted to make a dessert. I said, "ok, what ingredients do you have?" She mentioned a few things and it became very apparent that we'd be baking an apple pie. Perfect. As I was tossing the sliced apples with cinnamon, nutmeg, and sugar, she said "let's throw in a little almond extract!" Now, that's not usually one of my go-to add-ins for an apple pie, but she declared how much she loves anything with almond extract in it, and I figured, "hey, it's your pie, you can throw in anything you want!" So I added a few drops. It was delicious! Honestly, we couldn't stop stealing the apples out of the bowl while I was rolling out the crusts. And then I thought, "wait, how did I never know that you like almond this much?" I would search for an almondy something for you!"
 And now you're up to date with my inspiration for finding this recipe. To be quite honest, I found several almondy type recipes, and this is just the first (from a site called Genius Kitchen). Something tells me I'm gonna be making ALL of them for Terri until we find the favorite one. I guess I have several months of testing before we have our next Thanksgiving Eve cooking event. In the meantime, these almond squares are the perfect little sweet treat to bring to a brunch or a BBQ or a potluck. They're so tasty and they're super simple too!! And yes, of course, I'll be sure to let you know if we ever settle on a favorite!



4 eggs
2 cups sugar
1 cup (two sticks) butter, melted
2 cups flour
2 1/2 tsp almond extract
1 cup sliced almonds
1/2 cup confectioner's sugar



Beat together the eggs and sugar until lemon-colored. Add the butter, flour, and almond extract; mix well. Spread the batter in an even layer on a buttered 13x9-inch baking pan. Sprinkle the top of the batter with sliced almonds. Bake at 325° for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Remove pan from the oven and dust the top with a light sprinkling of confectioner's sugar. Cool completely before cutting into squares.


Tips:
Just as with any type of nuts, you definitely want to toast them before you use them.
Simply place them on a dry tray. Put the tray into the oven and let the almonds toast for a minute or two. As soon as you can smell them, take them out! (if you leave them in any longer, they will quickly burn!)

Hershey's Scrumptious Chocolate Layer Bars



 Whenever you want a rich and delicious chocolate dessert, you will absolutely never go wrong with a Hershey recipe. I have several Hershey's cookbooks, and I'm not even kidding when I tell you that every single recipe I've ever made from them has been fabulous. They're well tested, straight forward, and they never disappoint. So, since I wanted to try a new chocolate something, of course I turned to my Hershey's Chocolate Treasures cookbook, and here we are!
 At first, I wasn't thinking of doing any kind of bars or squares because I already have so many brownie recipes (not that there's anything wrong with having new brownie recipes, but I was looking for something different.) Then I saw this recipe, and knew this was the one! I love that the top and bottom layers are not chocolate, so it looks like pretty stripes when you cut into it. I also love that it has almond extract in it, since I recently discovered that my niece, Terri, is a big fan of almond flavoring. The technique was also easy, tried and true. You make one dough, which serves as both the top and bottom layers, and then add a fabulous filling. In this case, the filling is cream cheese and melted chocolate chips. Are you kidding? Seriously? They had me at cream cheese! 
 So if you're looking to try a new chocolate something, try this one! It hits every single note and it will absolutely satisfy every single chocolate craving!
 

12 ounces pkg. Hershey's semisweet chocolate chips or mini chips
1 package (8 ounce size) cream cheese
1 can (5.3 ounce size) evaporated milk
1 cup walnuts, chopped

1/3 cup sesame seeds (optional)
1/2 teaspoon almond extract
3 cups all-purpose flour, unsifted
1 1/2 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter or margarine, softened
2 eggs
1/2 teaspoon almond extract




 Combine chocolate chips, cream cheese and evaporated milk in medium saucepan. Cook over low heat, stirring constantly, until chips are melted and mixture is smooth. Remove from heat; stir in walnuts, sesame seeds (if using), and 1/2 teaspoon almond extract. Blend well; set aside. Combine remaining ingredients in large mixer bowl. Blend well with mixer until mixture resembles coarse crumbs. Press half of mixture in greased 13 x 9 inch pan. Spread with chocolate mixture. Sprinkle with rest of crumbs over filling; bake at 375 degrees F for 35 to 40 minutes. 


Tips:
I didn't not include walnuts or sesame seeds in my filling. Tbh, if I were to add nuts to it, I think I would prefer almonds (to continue the almond theme) or pecans (since walnuts are not really my favorite).
The dough was a little more gooey than I had anticipated, so I just chilled it for a bit which made it easier to cut in half, and also to crumble over the top.

Mint Chocolate Cookie Crunch Brownies


 Ok, lemme just say this right from the start, I'm am not the biggest fan of MINT. There. I said it. I mean, yeah, it's ok, but just not as the MAIN flavor of something. Otherwise, all I can think of is Altoids or toothpaste. The one mint thing I DO happen to love, however, is Girl Scouts' Thin Mint Cookies. I guess it's because the mint isn't so overpowering, and they are the perfect blend of chocolate and mint flavor. So I thought, well, lets put them into a brownie! Not an original thought, I know, but still a good one, and worth further research. Yes, yes, I know I could just buy a brownie mix, throw in some chopped cookies, and call it a day, but I usually don't like to use a boxed mix. That would take all the fun out of it!
  So I started looking for Thin Mint Brownie recipes. I found a TON of them, but many of them go VERY far with the whole mint thing. Adding mint extract to chocolate ganache, adding Andes Candies to buttercream, and on and on. Altoids, again. Sorry. Is it so much to ask for just the right brownie recipe with a thin mint crunch? I actually started to think, well, maybe what I really do want is a boxed mix and some chopped cookies.
 But then I found this fabulous recipe from a website called The Daily Meal, and it's exactly what I wanted. A scratch brownie with the thin mint crunch. Simple, easy, not complicated, and no Altoids. Could I still just do a boxed brownie mix and stir in some cookies? Of course, but I'll always go from scratch if I can help it!!


4 oz unsweetened chocolate
3/4 c butter  
2 c sugar  
4 eggs 
1 tsp pure vanilla extract  
1 c flour  
1/4 tsp salt 
2 c Thin Mint cookies, chopped


 Heat oven to 350 degrees F. 
Brush a 13- by 9-inch pan with butter. Melt the chocolate and butter in a large bowl over a double boiler. Transfer the melted chocolate to a mixing bowl. Stir in the sugar. Add the eggs, one at a time being careful to incorporate each egg. Stir in the vanilla extract. Add the flour and salt at once. Stir to combine. Fold in half of the chopped cookies. Spread the brownie batter evenly in the pan, and top with the remaining chopped cookies. Bake for 30 to 35 minutes. Remove from the oven, and cool completely before slicing and serving.


Tip:
 Instead of unsweetened chocolate, I used dark chocolate chips. Use what you have!
If Girl Scout Cookies aren't available, add any other kind of cookie you like! If you're still feeling the mint thing, use Mint Oreos!
 Btw, I didn't even measure 2 cups of cookies. I just used an entire box!

Salted Caramel Apple Pie Bars



  Well, it's officially Fall, and whenever I think of Fall, I think of baking things with apples and pumpkin. Yes, I'm THAT guy who loves everything pumpkin, but as I've often said, if you were to ask me what my favorite dessert is, in the whole wide world, in the history of ever, it would be an apple pie with vanilla ice cream and caramel poured over the top. Hands down. Like, there's not even another dessert that comes close. As much as I love a chocolate this and a chocolate that, I'd rather go for the warm cinnamon and apples that make the whole house smell like home. So when I was looking for an apple pie something to bake, I happened upon this little gem of an idea. Yes, they're apple pie, yes, they're BARS, and yes, they have caramel drizzled over them, and not only that it's SALTED caramel. Um, YES PLEASE.
 OK, so let's look around and see if I can find the right recipe. WHOA. Who knew there would be so many variations???? I found literally no less that 10 different versions on different cooking blogs all over the place. But then, I noticed something.. many of the recipes were adapted from (or inspired by) a particular version on one of my favorite websites, a blog called Sally's Baking Addiction. It seemed to me that this was the standard against which all others were compared. So I figured, well clearly that's the one I need to make!
And as luck would have it, I just happened to have all of the ingredients to make it! Perfect! At first, it seemed like a lot, but upon closer look, there was really nothing difficult about it. The dessert has several layers, so it stands to reason that the recipe would have several steps. All very simple!
And O. M. G. can I just tell you how heavenly they smell while they're baking?  I'm not even kidding. Oh, btw, whenever I share a recipe, I usually give you a few hints and helps, but Sally has already done that for me too. So, thank you, Sally, for yet another wonderful recipe and also for the hints! I remain a huge fan! It's nice to share something from someone who clearly loves baking as much as I do!
And the next time YOU happen to be looking for an apple pie something to bake, give this one a try.

Crust:
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup all-purpose flour

Apple filling:
2 large apples, peeled and thinly sliced (1/4 inch thick)
2 Tablespoons all-purpose flour
2 Tablespoons granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Streusel:
1/2 cup old-fashioned oats
1/3 cup packed light or dark brown sugar
1/4 teaspoon ground cinnamon
1/4 cup all-purpose flour
1/4 cup unsalted butter, cold and cubed

Caramel Drizzle:

or you can just do what I did..
I melted a bag of Kraft caramel bits with 1/4 cup of milk, then added a tsp of kosher salt.



 Preheat the oven to 300°F. Line the bottom and sides of an 8-inch square baking pan with aluminum foil or parchment paper, leaving enough overhang on all sides. Set aside.

Make the crust:
Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes while you prepare the filling and streusel.

Make the apple filling;
 Combine the sliced apples, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the apples are evenly coated. Set aside.

Make the streusel:
  Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Set aside.

 Remove the crust from the oven, and turn the oven up to 350°F. Evenly layer the apples on top of the warm crust. It will look like there are too many apple slices, so layer them tightly and press them down to fit. Sprinkle the apple layer with streusel and bake for 30–35 minutes or until the streusel is golden brown.
 Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Once cut, drizzle some salted caramel sauce on top of each. These apple pie bars can be enjoyed warm, at room temperature, or even cold.




Sally's Tips:
The bars will stay fresh in an airtight container in the refrigerator for 3 days. You can freeze the bars for up to 3 months. Then, thaw overnight in the refrigerator before serving and drizzling with caramel. I like to use two different kinds of apples for a more complex flavor. I typically use 1 tart apple variety such as Granny Smith, and 1 sweeter apple variety such as Pink Lady. You'll end up with about 3-4 cups. A little more or less is OK, based on your preference of filling. Recipe can easily be doubled and baked in a 9x13 pan. Bake for 45-55 minutes and cool completely as directed in this recipe.

Joey's final thoughts:
Of course I doubled it and baked it in a 9x13 pan. Because MORE IS MORE! I used Honeycrisp apples because they're my absolute favorite. And then I added an extra little sprinkle of salt over the top. You do you!!

Peanut Butter White Chocolate Blondies


  Do you ever get in one of those moods where you just feel like having a specific something??? Like, lately I've been in the mood for something peanut butter. I blame my niece, Kristin, because she's always saying "The peanut butterier the better!" So I did a quick inventory of my pantry to see what might inspire. I found a bag of white chocolate chips and immediately knew that this was the right PB pairing. It reminded me of white chocolate Reese's cups, which I ABSOLUTELY LOVE. So I did a bit of googling and found this recipe on a blog called Bake or Break. That's it!! It's sweet, it's salty, and it's everything you want in a peanut butter dessert. Also it's quick to throw together and it uses regular everyday ingredients that you probably already have in your pantry. Perfect!
So the next time you're feeling like something peanut butter, just whip up a batch!
They'll definitely satisfy your deepest PB cravings!



1  1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon*
1/2 teaspoon salt
1/2 cup unsalted butter, melted and slightly cooled
1 1/2 cups firmly packed light brown sugar
1/2 cup creamy peanut butter
2 large eggs
1 teaspoon vanilla extract
1 cup white chocolate chips or chunks
Preheat oven to 350°F. 
Grease an 8-inch square baking pan. Whisk together the flour, baking powder, cinnamon, and salt. Set aside. Using an electric mixer on medium speed or mixing by hand, combine the butter, brown sugar, and peanut butter. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla. If using a mixer, reduce the speed to low. Gradually add the flour mixture, mixing just until combined. Stir in the white chocolate chips. Spread the batter evenly in the prepared pan. Bake 35 to 40 minutes, or until a pick inserted into the center comes out with a few moist crumbs attached. Cool completely in the pan before cutting into bars.


Tips:

*As I've posted above, you'll notice that the original recipe includes cinnamon, but tbh, I think I may omit it next time. Now, you know how much I love cinnamon... my usual rule of cinnamon is "there's no such thing as too much", but in this instance, I think even that tiny little bit conflicts with the peanut butter flavor. I think it gets in the way of the salty sweet thing that I love so much. But they're still delicious either way! You decide!


Baking for a bigger crowd? Just double the entire recipe and bake it in a 9x13 pan. The baking time stays the same. 
Want it to be even peanut butterier? Add some peanut butter chips along with (or instead of) the white chips!
As always, when I bake any kind of brownies or dessert bars, I line the pan with parchment paper with a little extra hanging over the edges. Then after the bars are baked and cooled, I use the parchment as a sling to lift the whole batch out of the pan at once. This saves your pan from being ruined, and it lets you make nice even perfect cuts!
Btw, I added an extra tiny little pinch of salt because I love salty and sweet together. It also really brings out the flavor of the peanut butter!

Blueberry Blondies



Ok, ok, before I say a word about this recipe, I should tell you that the original recipe is NOT called Blueberry Blondies. It was given to me by my friend, Gina, who found it on a blog called Averie Cooks, and it's really called Crustless Blueberry Pie. But here's the thing... As delicious as it is, in my humble opinion, it's not a pie! I mean, the only thing that made it a pie was the fact that it was originally baked in a pie dish. But even the blog called it "somewhere between cake and a blondie." And, since I was making it in squares, I decided to just name them blondies and call it a day. Oh, and since one pie plate's worth of batter wouldn't be enough for a 9x13 pan, I simply doubled the recipe and added a little sprinkling of coarse sugar over the top for a little crunch. So there you have it. Full disclosure!
 Actually, at first I wasn't going to share the recipe, considering that I had just repurposed it a little, and I thought maybe Averie would be a little offended. But then I decided to ponder what it would be like if someone had reworked one of MY recipes, and I thought "Well GOOD!" That's what cooking is supposed to be! That's how new recipes are born! You see what someone else has done, you tweak it here and there, you keep what you like, and change what you don't like, and then PRESTO we have something new! Sometimes it turns out to be completely different, and other times it turns out to be a blondie instead of a pie. The important thing is that YOU made it homemade for your family and friends, and everyone loved it. And that's a pretty awesome thing, I must say.
 So, Averie, if you're reading, please feel free to browse any of my recipes and repurpose them as much as you like! I would love to see what changes you make!




2 cups white sugar
2 cups all-purpose flour
2 tsp cinnamon
1/2 tsp salt
1 cup (2 sticks) unsalted butter, melted
4 large eggs
2 tsp vanilla extract
1 tsp almond extract
4 cups plus 1/2 cup fresh blueberries
1/3 cup turbinado sugar (coarse sugar, or sugar in the raw)


Preheat oven to 350F. Spray a 9x13 pan with baking spray or line with parchment paper; set aside. To a large bowl, add white sugar, flour, cinnamon, salt, and whisk to combine; set aside. To a medium bowl, add the slightly cooled melted butter, eggs, extracts, and whisk to combine. Pour the wet mixture over the dry and stir to combine; don’t overmix. Add 4 cups blueberries and gently stir to combine; batter is very thick. Turn mixture out into prepared baking dish, smoothing the top lightly with a spatula. Evenly sprinkle remaining 1/2 cup blueberries over the top. Evenly sprinkle the turbinado sugar over the top. Bake for about 35-40 minutes or until edges are set and a toothpick inserted in the center comes out clean or with a few moist crumbs but no batter. Cool completely or chill before cutting into squares.



Tips:
The almond extract is quite a strong flavor. It definitely comes through. If you're not a fan, just leave it out!
I listed the recipe with the amounts I used for the 9x13 pan, but if you'd prefer to bake it in a 9" pie dish, just cut everything in half!
For a variation, try any other kinds berries or a combination there of!

Jam Swirled Cheesecake Squares


  Just as I do every year, I was looking for a red white and blue something to make for July 4th. This year's contribution is an easy and perfect time saver because you can do it way ahead!
 I was trying to think of something that would work with my home made strawberry and blueberry jams, and this is what I found! It's a slightly tweaked version of a Nestle recipe and it's just exactly what I was looking for. Just a quick basic crust, basic cheese filling, and then a swirl of jam! Perfect, right? Seriously, its beauty is in its simplicity. It's the perfect starting point recipe for any cheesecake squares, and then you can vary it up however you like.
 I just happened to have some strawberry pineapple jam, and a brand new batch of fresh blueberry rhubarb jam on hand, so that's what I used, but I will DEFINITELY try other flavors the next time I make this. Ooo maybe fresh blackberry jam next! Or maybe fresh pineapple, one of my all time favorites! I promise, your friends and family will absolutely devour these little gems at your July 4th BBQ long before it's time for fireworks! Have fun, be safe, and enjoy!




First line a 9x13 baking pan with parchment paper with an inch or two of overhang on each side.

For the crust:
one entire box of shortbread cookies or vanilla wafers
2 tbs sugar
4 tbs melted butter

Place all ingredients in a food processor and give it a good blitz until it becomes fine crumbs that are evenly coated with butter. Press evenly into prepared pan. Bake crust for 15 minutes at 325ºF.

Remove from oven. Let it cool. Meanwhile make the filling.

For the filling:

3 (8oz) pkgs cream cheese, softened
4 large eggs
1/2 cup sugar
1 tsp pure vanilla extract
pinch of salt

Use a paper towel to wipe out the food procesor of crumbs. No need to completely wash.
Place all filling ingredients in the now crumb free food processor. Process until completely smooth.
Pour filling over baked crust.

For the topping:
Place teaspoonfuls of your favorite jam all over the top. I would say about 1/4 -1/3 cup of jam, total. Yes, it will probably sink in, but that's ok. Use a tooth pick to swirl, making sure not to disturb the underlying crust.
Bake at 325ºF for 40 minutes or until set. Cool completely then refrigerate for several hours or overnight. Cut into squares and serve!



Tips:
For the crust, I used Lorna Doone cookies. Why? Because I LOVE 'em! But use anything you like. Vanilla wafers or graham crackers would be my second choice. You could even do golden or regular Oreos. No need to add the butter and sugar, just process until crumbs and then proceed as directed!
 Don't have a food processor? just crush the cookies in a ziploc bag. And use an electric mixer to mix up the filling! The only reason I used a food processor for the filling was because I didn't feel like washing another dish! heehee
 I used strawberry pineapple and blueberry rhubarb jam. I wanted the red white and blue, but feel free to add just one. Or as many as you like! Don't have any jam? Use teaspoonfuls of pie filling instead!
Definitely be sure to chill the pan for several hours. It makes cutting into squares so much easier!

Cake Mix Blondies


Many people ask me if I ever use cake mix when I'm baking. Well, the answer is yes and no. Yes, I use cake mixes all the time, but no I never use them to just bake a cake. I always use them like an ingredient in another recipe. If I'm using it as a cake, it'll be with other cake ingredients that don't follow the directions on the box.
 So I happened to have a yellow cake mix and decided to do something with it. I found a recipe for blondies on a blog called Like Mother Like Daughter and decided to try it, since I already had all of the ingredients. I did tweak it slightly and it turned out great! It was quick and easy and it was just exactly what I wanted. Perfect for a birthday party or just because you're feeling something sweet and fun and festive!!



1 box yellow cake mix
1 large egg 
1/4 cup oil
1/3 cup milk
1 tsp pure vanilla extract 
2/3 cup white chocolate chips 
rainbow sprinkles for the top


Preheat your oven to 350ºF.
In a large mixing bowl, combine your cake mix, egg, oil, and milk. Stir in your sprinkles, chocolate chips and white chocolate chips. Spray a 9x13 pan with nonstick spray. Spread your batter into the pan evenly. Bake for 18-22 minutes until bars are a light golden color. Cool completely or chill. Slice and serve.
 
Tips:
The original recipe called for 1/3 cup white chocolate chips and 1/3 cup milk chocolate chips, but I decided to do all white chips. It also called for a 1/3 cup of the sprinjkles mixed into the batter, but I decided to just sprinkles them across the top. 
I think I'm gonna try this recipe with other kinds of cake mix and other mix ins. Next time I think I'll do chocolate cake mix with salted caramel chips or maybe peanut butter chips. Do what you like!
